To prepare we will need:

  • Green (unsteamed) buckwheat – ½ cup
  • Water – 1 glass
  • Agave syrup (or other syrup/cane or coconut sugar) – 1 tbsp. spoon
  • Soda – ¼ teaspoon
  • Apple cider vinegar – ½ teaspoon

1. It is better to wash and dry green buckwheat, and then grind it in a coffee grinder. But I don’t wash it, I chop it right away.


Gradually pour water at room temperature into the flour and mix with a whisk.

2. Add a pinch of salt and agave syrup. Stir well. Leave the dough for 10 minutes so that the flour swells.


3. Pour slaked soda into the dough apple cider vinegar(or lemon juice).


4. Grease the frying pan with vegetable oil and fry the pancakes on both sides until golden brown.

Adherents of a healthy diet usually have a very negative attitude towards pancakes. This is understandable from the recipes that are offered everywhere, and it is very difficult to prepare a healthy dish from those products that are sold in stores. We also haven’t cooked pancakes for many years, but recently we remembered them and started making them quite simply. Otherwise, every Maslenitsa was sad - how could we live without pancakes?..

The recipe is very simple- flour and water, a little salt, you can add seasonings to the dough (cardamom, coriander, cumin, etc.). There is no soda, no milk, no eggs in the recipe, they turned out to be unnecessary - and without them you get great pancakes! After the above ingredients are mixed with water in a mixer, you can add a couple of tablespoons of oil (we prefer olive oil).

While the dough is preparing, you can put the pan on the fire to warm up. And, adding butter to the dough (by the way, you can do without it) - start baking.

In order for pancakes to be called a healthy food product, simple store-bought flour is not suitable. We cook pancakes (and all other baked goods) on whole grain flour. You can also cook with rye - you can buy it in regular stores, called Rye Odirnaya. We order whole wheat from online health food stores.

Pancakes prepared in this way are unique, reminiscent of pita bread. You can wrap anything in them, use them as bread, eat them with honey, sour cream, cheese... whatever you like. They are tasty and healthy.

In the future, my dream is to try cast iron pancake makers, but we don’t have those yet. In general, it works well on Nevsky, my only complaint is that it takes longer to fry. But, of course, there is no need to oil it at all, even for the first pancake. You just pour in the batter and the pancakes will come away from the pans on their own (especially if you add vegetable oil to the batter). Well, there is also a big suspicion that these frying pans (ceramic coating), in general, are not much different from Tefal frying pans in terms of harmfulness... It’s just that everyone already knows about the harm of Teflon and is talking about it everywhere, but they are still silent about ceramics. If anyone knows more precisely, write.

This pancake recipe is very similar to Indian chapatis the only difference is that there the dough must be rolled out and placed in a frying pan (and then, ideally, kept over an open fire), and here it is poured into the frying pan. They turn out just as dry, but they are more pleasant to eat than chapatis, they are still softer and thinner.

And one more strange thing. We usually cook in the village, here the water is spring, everything is fine. Recently we tried the same recipe in the city, on the same pans, with the same flour. The only difference is that in the city there is a gas stove, here there is an electric one, and the main difference is water. So, in the city we didn’t get such pancakes!! They weren't cooked there at all. The dough seemed to be burnt on top, but remained completely raw inside. We tried it several times, the first two times the pancakes worked, but then the result was the same - they fall apart and don’t turn over even on non-stick frying pans. The only conclusion we could draw was that it was probably because of the water. We tried it again later - sometimes it works, but you need to make a thin dough so that the pancakes are thin. To prevent tearing, you can add starch.
