Chop the green onions, dill and parsley and add to the filling.

Preparation:

  1. Beat eggs in a bowl with salt. Pour in cold kefir and repeat beating.
  2. Cut two circles from the pita bread to the size of the frying pan. One sheet should be left whole and placed in the selected container so that the edges protrude.
  3. Cut the remaining pita bread into pieces and place in a mixture of kefir and eggs.
  4. Pour some of the grated Dutch cheese into the pan with the base.

Two of them are sold in the form of large flat cakes with uneven edges; they differ in color (white with tan marks and speckled, like a pancake) and density: white is denser, red is looser. The third type is called lavash roll and is sold in one sheet with smooth edges in the form of a roll.

I consider it necessary to say a few words about the filling. You can use any cheese in lavash envelopes, even Russian. But! It’s best to make them with cheeses such as Adyghe, Suluguni, feta cheese and Imeretian cheese (if you can find it).

When melted, they acquire the necessary consistency and creamy curd taste. Then, when semi-hard cheeses (Russian, Kostromskoy, etc.), although they melt perfectly, when cooling they turn into a not very pleasant rubbery substance.

However, if you fill the envelopes with different types of cheese, that is, use a mixture, then a small percentage of semi-hard cheeses (about 30%) show only their best side. By the way, this recipe for fried pita bread with cheese is perfect for recycling pieces of cheese that can no longer be cut for the table.

  • Grate the cheese (I have a mixture of feta cheese, Adyghe and Suluguni) on a coarse grater. If it's not salty enough, add a little salt.
  • Wash the greens and dry with a paper towel. Chop the parsley and dill leaves as finely as possible and add them to the previously chopped cheese.
  • Mix the cheese mixture thoroughly.
  • Try the filling, if desired, its taste can be made more piquant. To do this, use dry garlic and hot red pepper.

How to fry pita bread with cheese in a frying pan

Let's prepare pita bread for the envelopes. Unfold both sheets, place them on top of each other and cut down the middle. Thus, you received four plates in which we will wrap the filling.

Attention!!! If you are using large sheets, it would be advisable to trim them slightly. The thicker rounded ends should be cut off. When using small sheets, this may not be necessary.

  • Spread the prepared piece with the wide side facing you, and place a fourth of the filling in the middle.
  • Distribute the cheese filling with herbs in a rectangle in the center of the pita bread, so that the length of the ends to the right and left of the filling is equal to the size of the filling.
  • Fold the pita bread over the cheese on top and bottom. You have a long strip of dough with filling inside.
  • Now we bend one end of the bundle up, the other down. Thus, there will be the same amount of dough on both the top and bottom of the envelope.

The envelopes are ready, now all that remains is to fry the pita bread with cheese and herbs in a frying pan. Heat a bowl with 1 tablespoon of vegetable oil and place our envelopes in it.
