Our raw bread recipe is very similar to peasant grain bread, which are very popular in Lithuania and Germany.

You can prepare it in three different variations. Just add additional ingredients to the recipe.

  1. Raw bread with garlic- Add 2 cloves of garlic to the recipe.
  2. Raw bread with peppers and onions- Add ½ large pepper and ½ medium onion to the recipe.
  3. Spicy - sweet raw bread — add 1 chili pepper (dried or ground) and 5 dates to the recipe.

    The cooking process is very simple. Grind flaxseed and sunflower seeds for flour. Combine the other ingredients, except water, with each other and mix to a (relatively smooth) mass. Next, combine the flour with the resulting mass and knead the dough. The dough should be flexible, not sticky. If it's too brittle, add a little water; if it's too runny, add more flour.

    The next step is rolling out the dough. It is best to do this under foil or baking paper. This will prevent the dough from sticking to the rolling pin.

    The thickness of the dough is any. In the beginning, we suggest experimenting with different thicknesses. Denser bread has a more intense flavor after drying.

Raw food breads are a very interesting thing! They can easily replace toast, and there are a lot of options for preparing them, so you can find a recipe for every taste. The only thing is that to prepare the bread you need a dehydrator (a special drying facility where you can dry food at different temperatures, starting from 35 degrees). Of course, you can dry the bread in the oven at 115 degrees, but I’ve never done this, so I can’t tell you what nuances will arise during the cooking process.

Tomato raw bread

We will need:
tomatoes – 500 gr,
red peppers – 2 pcs.,
brown flax seeds – 300 g,
garlic – 1-2 cloves (optional),
dried or fresh herbs – basil, dill,
salt and pepper to taste.

I know that now you won’t find natural tomatoes and peppers during the day – it’s not the season. We bought large quantities of late tomatoes in mid-October, and they are still lying quietly on the balcony. We clean the ones that spoil and use them for cooking; the rest we eat raw. But these, of course, are the last tomatoes this year. However, I still want to share the recipe, let it remain with you for the future. Or maybe someone would like to make bread from imported tomatoes that are sold now.

Preparation:

Place the tomatoes, peppers and garlic squeezed through a garlic press (can be done without garlic) into a blender and beat into a porridge. Place everything in a bowl. Flax should be ground in a coffee grinder into flour and added to the tomato mass. Mix everything well, add salt and pepper and place on a silicone dehydrator sheet. You can sprinkle with different seeds, I sprinkled with sunflower seeds. We evenly level the “dough” and dry it at 40-45 degrees. In about 6-8 hours better bread turn over.

As a rule, by this time the mass will have already dried on top and you can carefully turn it over onto a regular tray with the dried side down, carefully peeling off the wet side with a spatula. It is better at this stage to cut the bread into pieces (by pressing a simple knife or the same spatula). When they are already dried, they are a little inconvenient to break, since the finished bread breaks unevenly and crumbles. And you will also be very pleased with the smell in the apartment during drying!

Onion bread

Onion bread tastes like something like chips or crackers. In our case, it gives them this taste soy sauce. You need to choose high-quality soy sauce! The cheaper it is, the more likely it is that this is a pitiful imitation of soy sauce with various additives. Be sure to look at the bottom of the bottle: there should be no white sediment there - only clean, almost black liquid.

I can’t say that I have detailed information about the benefits of soy sauce, I haven’t studied this topic thoroughly, but so far I haven’t found anything bad about this product; on the contrary, I’ve read that soy sauce is even healthy in moderation. I would be grateful if someone would share their knowledge on this matter.

We will need:
onion – 250 g (one large onion approximately),
soy sauce - ¼ cup,
olive oil cold pressed – ¼ cup,
brown flax – 200 gr.

Place the chopped onion, soy sauce and olive oil in a blender and blend. Grind flax in a coffee grinder into flour. Mix everything together. We do not add salt, as soy sauce is already salty. Place the mixture on a silicone dehydrator sheet and sprinkle with parsley and sesame seeds. Dry at 40-45 degrees and do the same manipulations as with tomato bread. The breads dry in total for about a day - a day of a crazy smell in the apartment, which is difficult to resist... Therefore, dry the breads on the balcony, if you have one.

As you can see, making raw food bread is as easy as shelling pears! The hardest part of this process is waiting to eat them!

The raw food diet is gaining more and more supporters who are confident that it is the optimal nutritional system for the body or is the ideal diet for treating a number of diseases. Flax seeds 100 gr
Tomatoes 200 gr
Fresh herbs(I used basil) 5 g (3-4 leaves)

Step 1

Blend tomatoes and herbs in a blender

Skip tomato paste through a sieve. We use large pieces of tomatoes, seeds, skins and sprigs from herbs for bread. Tomato juice can be drunk or used for another dish. We don't need juice for raw food bread.


Step 3

Grind flax seeds in a coffee grinder to flour and mix with tomato skins, salt and black pepper


Step 4

Mix well. You should get a thick paste similar to plasticine.


Step 5

With wet hands, form flat loaves of bread 0.3 cm thick and place the raw food bread blanks on baking paper. Place in the oven or in a vegetable dehydrator or dehydrator.


Step 6

Bake/dry the bread at a temperature of 45-50 degrees for 3-5 hours. If you dry in electric oven, then use a convector and open the oven door every 40 minutes for 10 seconds to release excess moisture.

How to make raw bread from flax and Jerusalem artichoke

Let's start easy vegetable recipe, which is deservedly loved by most raw foodists - for this we use Jerusalem artichoke cake.

This valuable vegetable helps to maintain normal carbohydrate metabolism in our body, and in combination with other equally healthy products, it becomes a real storehouse of vitamins.

  • First, marinate the onion with lemon juice. Cut the onion as finely as possible and pour in lemon juice, leave to stand for half an hour.
  • Squeeze the juice from carrots and Jerusalem artichoke.

The ideal solution for a raw foodist's kitchen is a powerful auger juicer. An intermediate option is a conventional device that operates on the principle of a centrifuge. Then there will be more moisture in the cake. In our case, this is not bad: a slightly damp cake is best combined into a dough with ground flaxseed. If the cake turns out dry, add a little juice.

  • Add all the water to the cake and evaluate the mass for the presence of vegetable fragments. We want a smooth, uniform texture. If we find easily recognizable pieces, then we crush the cake with a blender.
  • Grind flax seeds in a coffee grinder.
  • Add the resulting mixture to the cake flaxseed meal and all the infused onions along with lemon juice. Mix thoroughly.
  • Enrich the mixture with salt and spices to your taste.

Let's move on to forming a bread layer

  • We distribute our bread mixture onto the dehydrator sheets.
  • We draw with the blunt side of the knife, almost right through, marking the rectangular shape of the future loaves (this is how we outline a convenient grid for breaking, where the cell is the future piece of bread).
  • Place in a dehydrator and dry until ready.

How long does it take to dry bread?

It's hard to know for sure how wet each successive mixture will be. Therefore, we determine readiness by how easily the pieces separate from the dehydrator sheet.

According to the experience of experienced raw foodists, the average drying time for bread (according to any recipe) at 40 degrees Celsius ranges from 5 hours to a full day.

Isn't it a job for patient people? You will treat such bread differently - reverently and carefully. It remains “alive”, filled with dietary fiber, in addition, the product is saturated with enzymes for better absorption, and in general it retains everything beneficial features vegetables and seeds.

The peculiarities of the Jerusalem artichoke recipe are the absence of large seeds, nuts, garlic, but most importantly, it is easy to combine with any winter vegetables. Pumpkin can take the place of carrots - without compromising the taste of ready-made raw food breads.

Raw food bread with seeds and nuts

Such recipes are common among novice followers of a raw food diet. The seeds just beg to be put into some edible layer, because we all remember kozinaki and cheesecakes from traditional cuisine.

In this recipe, we will again grind the ingredients and dry the workpiece in a dehydrator. If you don’t have such an appliance at home, use an oven.

Ingredients

  • Pumpkin seeds - 50 g;
  • Sunflower seeds - 50 g;
  • Almonds - 50 g;
  • Sesame seed - 50 g;
  • Poppy seed - 50 g;
  • Flax seeds - 50 g;
  • Garlic - 2 small cloves;
  • Tomato - 1 pc. medium size;
  • Celery stalk - 1 pc.;
  • Sweet pepper - 1 pc. (small fruit);
  • Salt - 1 tsp;
  • Spice “khmeli-suneli” - 1 tsp.

Recipe for making raw bread with nuts and seeds

  • Sprinkle 1-2 teaspoons of seeds aside. They will go into the bread whole - to give it a crispy texture.
  • Grind the remaining seeds and almonds in a blender.
  • Finely chop the vegetables and add to the nut mixture. Add seasoning and salt here and use the blender again.
  • Take a large bowl and pour the mixture from the blender into it so that it is convenient to knead the bread dough.
  • Add the reserved whole seeds to the mixture - sunflower, pumpkin, flax, sesame and poppy seeds.
  • Knead and distribute the mixture on a dehydrator sheet.

Layer thickness - to taste. Thick breads resemble a dried slice of Borodinsky, thin ones resemble snack plates.

  • We make a grid on the bread layer with the blunt side of a knife so that after drying the bread can be easily broken along the marked line.

  • We dry, as in the previous recipe, at 40-41 degrees Celsius - exactly until the bread begins to easily move away from the sheet.
  • You can remove the bread from the sheet after 4-5 hours, turn it over and send it directly to the wire rack to finish drying. This reduces drying time.

Creative ideas and dehydrator alternatives

You can roll out and mark the layer in different ways: make a circular grid, as if cutting a cake, or cross it with pointed rhombuses. In a word, let’s play with the bread! After all, this is our basis for future juicy canapés, exotic cakes and raw food pizza combined.

As for the dehydrator, you can also find a replacement for it. If you don't have one, use an oven. We set the heat to minimum and open the door well, for example, by inserting a thick wooden spatula between the door and the oven.

You may be wrong with the temperature and violate the canons of raw food cuisine, but this is not so scary, because, in any case, such a product will be much healthier than traditional yeast bread.
