Such meatballs can be safely included in the children's menu.

To prepare meatballs from minced chicken with rice in the oven, take: chicken breasts or ready-made minced chicken (it’s better to make the minced meat yourself, it will be safer), round rice, onion, chicken egg, vegetable oil, tomatoes, carrots, water, salt , black pepper. Boil the rice until half cooked and drain the water. Cut the onion into cubes.

Fry onion (0.5 pcs.) in vegetable oil (30 ml) until golden. Cut the chicken fillet into cubes.

Pass the chicken meat through a meat grinder. Add rice, fried onion, egg, salt and a little ground pepper to the minced chicken. Mix the minced meat.

Ingredients

  • rice – 100 g (cereal weight),
  • minced chicken (I have it ready-made, frozen) – 500 g,
  • onion – 2 small heads,
  • carrots – 1 pc.,
  • tomato paste – 4 tbsp. l.,
  • sour cream (10-20%) – 4 tbsp. l.,
  • water – 200 ml,
  • vegetable oil – 30 ml,
  • salt and seasonings - to taste,
  • bay leaf – 1-2 pcs.,
  • greens (dill, parsley) - a couple of sprigs.

Preparation

  1. First of all, boil the rice. We need it half-cooked, so we wash the rice thoroughly and fill it with water in a ratio of 1:1.5; those. by 0.5 tbsp. I took 0.75 tbsp of rice. water. Boil the rice over medium heat until the liquid has completely evaporated. There is no need to salt the rice.
  2. Next, the cooked rice should cool. Let cool. In the meantime, let’s prepare the rest of the minced meat for the meatballs. Frozen minced chicken - defrost, I put it in a micro for 10 minutes. to “defrost” mode. We chop one onion in any way convenient for you, I crush it with a blender-mill into a small cube.
  3. When the rice has cooled completely, mix it with minced chicken and onions, add an egg to them. Add some salt to the minced meat and season with seasonings/spices to taste and desire. I added a little paprika and seasoning for Korean carrots, a very successful mixture, in my opinion, suitable for almost any dish. The minced meat for the meatballs is ready.
  4. Wet our hands with water and roll the minced meat into balls the size of a small tangerine. We put them in a mold, preferably a deep one. Next we make the gravy. I make it with vegetables - onions and carrots. If you don’t like vegetables in gravy (my children sometimes protest against such vegetable additions), you can skip this step. Chop the second onion into cubes, three carrots on a coarse grater. Heat the oil in a frying pan and fry the vegetables under the lid until soft.
  5. At the same time, make the sauce: mix tomato paste with sour cream, dilute it all with water, add chopped herbs. If necessary, add some salt and season the sauce.
  6. Pour the tomato-sour cream sauce into the pan with the vegetables. Throw a couple of bay leaves into it and let the sauce simmer for about 5 minutes. Done. Remove the bay leaves from the prepared sauce. Pour it over the meatballs and load the mold into an oven preheated to 180-200 degrees.

Minced chicken meatballs in the oven with gravy

We will need:

  • minced chicken - 600 gr
  • onion - 1-2 pcs
  • egg - 1 pc.
  • cream or milk - 200 ml.
  • cheese - 150 gr
  • zucchini - 1 piece
  • garlic - 1 clove
  • drain oil - 1 tbsp. spoon (if cooking with milk)
  • rast. oil - 1-2 tbsp. spoons
  • spices for chicken
  • salt, pepper - to taste
  • dill greens - 5-6 sprigs
  • black sesame - 0.5 tbsp. spoons

To ensure that meatballs and cutlets made from minced chicken have a good shape and do not spread out, it is better to cook them from chopped minced meat!

Preparation:

1. I had the minced meat already ready. I made it from chicken breasts. Usually I try to cook fresh minced meat, but I still make such preparations in case there is no time to do it. Today is just such a case.

Minced meat should be defrosted at room temperature or in the refrigerator. So this morning I took it out of the freezer and put it in the refrigerator. When I returned home in the evening, the minced meat was already defrosted.

2. If you do not have ready-made minced meat, then it is better to prepare it from chicken breasts. They are not so fatty and have a lot of pulp. The breasts need to be lightly beaten to make the meat softer. And then chop finely. If desired, we can either leave the skin or remove it. Or we leave it, but partially.

3. And so our minced meat is ready. Let's do the onions. You don’t have to spare onions; the more onions, the juicier the meatballs will be. I took one large onion. About 200 grams. You can take two smaller ones.

Cut the onion into very small cubes. If you cut it larger, it will be felt in the finished meatballs. This doesn’t bother some people, but others don’t like it at all. I always try to cut smaller. So that the onion completely gives all its juice and taste to the meat, and itself becomes completely invisible. In my opinion, if you can taste the onion, it can interfere with the perception of the taste of the dish as a whole.

To prevent the onion from eating your eyes, cut it into two halves and rinse it under running water. Place a plate of cold water nearby and periodically wet the knife in it. Thus, we wash off the onion juice from it.


4. Place the onion in the minced meat, add salt and pepper. Add spices for the chicken; you can use ready-made ones. Or you can collect the ones you usually use yourself. Spices such as rosemary, thyme, and marjoram are good for chicken. You can also add Provençal aromatic herbs. Oregano is great for minced chicken products.

It is better not to neglect spices. Chicken meat is quite bland, and it’s the spices that help bring out its flavor. Chicken dishes become much tastier with their use!

5. Beat the egg with a fork, adding a little salt. And add to the minced meat. Mix it thoroughly until smooth.

6. Beat the minced meat. Of course, you can bypass this procedure. But I always try to beat the minced meat, even chicken. Meatballs and cutlets made from beaten minced meat turn out much juicier and tastier, due to the fact that excess moisture is removed from the minced meat.

7. Make garlic butter. To do this, chop the garlic and pour vegetable oil into it. Let sit for a while until the oil acquires a garlicky aroma. It’s better to do this in advance, before you start minced meat.


8. Peel the young “milk” zucchini if ​​necessary. If the skin is clean, soft, and especially if the zucchini is grown in its own beds, there is no need to cut it off. Cut it into slices slightly less than 1 cm thick.

9. Prepare the mold, I use a glass mold with high sides. Pour garlic oil into it along with chopped garlic. Using a brush, distribute it evenly over the entire surface of the mold, including the sides.

Garlic will give the necessary aroma and a good note of taste. And at the same time, it will not affect the chicken meat at all, and it will remain with its delicate taste.

10. Place zucchini slices on the bottom of the pan. Lightly salt them.


11. Place a formed round meatball of not very large size, 6-7 cm in diameter, on top of each circle.


12. Preheat the oven to 180 degrees.

13. Place the pan in the oven and bake for 12-15 minutes.

14. During this time, make the cream and cheese sauce. Three hard cheeses on a coarse grater. Pour cream over it and stir. Lightly salt and add pepper if desired.

15. After 12-15 minutes, take out the mold. Place two tablespoons of cheese mixture on each meatball. Then pour in the remaining cream or milk evenly.


16. Put it back in the oven. This time for 15-20 minutes, until the meatballs are covered with a beautiful and fragrant golden brown crust.

17. If you are making gravy from milk, then 5 minutes before it is ready, you can add a little butter. First, carefully grease all the meatballs, trying not to damage the cheese crust. And then cut the remaining butter into pieces and place it in the mold, distributing it evenly over the entire surface.

The oil will add flavor to our meatballs. And it will allow you to brown the crust even more.


18. Remove the finished dish from the oven, sprinkle with chopped herbs, in this case dill.

19. Serve hot, placing the meatballs directly on the zucchini circle. The zucchini released juice, and there was also enough gravy. So I pour the gravy into small bowls. Sprinkle black sesame seeds on top and serve with meatballs.



While we had 15-20 minutes to spare, we cut the salad.

Fresh vegetable salad with spinach

We will need:

  • tomato - 1 pc.
  • cucumber - 2 pcs
  • bell pepper - 1 piece
  • spinach - a handful
  • green onion - 3-4 feathers
  • lemon - 1/3 part
  • olive oil - to taste
  • salt, pepper - to taste
  • black or white sesame - 0.5 tbsp. spoons


Preparation:

1. Cut a large juicy tomato, two small cucumbers and a medium-sized bell pepper as you usually cut for a salad.

2. Add spinach.

3. Salt and pepper to taste.

4. Sprinkle with lemon juice. Mix.

5. Add olive oil. I add a little olive oil and a little . I always add it to salads because it is very healthy. Mix.

6. Sprinkle sesame seeds on top.

That's it, our delicious dinner is ready! It took us a little less than an hour to prepare it. Pretty good for a dinner like this.

I'll tell you a little about what happened. The meatballs turned out very juicy and flavorful. Even surprisingly juicy, considering that we prepared them from a rather dry chicken breast. The gravy itself turned out very tasty. It combines the taste of all ingredients and spices. And it turned out to be satisfying, with a fairly rich taste and aroma.

Today's salad turned out to be full of vitamins. All the vegetables, except for the tomato (they are not yet ripe) are from my garden, just picked. Cucumber and bell pepper just have an insane smell.

The salad is very simple. But just as delicious as simple. Lemon juice is not unnecessary, it gives a fresh smell and taste. Overall, the dinner was a success! Although dinner has already passed, I’m writing now and my mouth is actually watering...

How to cook delicious minced chicken meatballs with gravy

We will prepare the minced meat ourselves from chicken fillet. You can, of course, buy ready-made minced meat in the store, but I prefer to cook minced meat at home. Today we used chicken fillet to prepare minced meat. Chicken thighs will also work, but the easiest option is chicken breast.

The rice should be boiled until tender without adding salt.

The minced meat can be prepared in a meat grinder or chopped in a blender. We will cook in a blender. Therefore, the first step is to prepare the products for the blender. Cut the onion into small pieces. We also cut the fillet into pieces so that it is convenient to immerse them in a blender or meat grinder.

First of all, chop the onion in a blender. Place the chopped onion in a bowl where we will later knead the minced meat for the meatballs. Then chop the fillet pieces and place them in a bowl with onions. We also send boiled rice here. To make the meatballs even tastier, grate the melted cheese here on a fine grater. You can grate 100 grams of hard cheese, but it will be much tastier with processed cheese. Now we add salt to taste, try to make sure that the minced meat is moderately salted, but not too salty, since we will also add salt to the gravy. Let's pepper it a little. We'll also add spices for the chicken here. And knead everything well and thoroughly with your hands. So that all the ingredients are mixed evenly. Please note that we do not add an egg, since the cheese and rice will hold their shape perfectly together, and the meatballs without the egg will be much more tender and juicy.

The minced chicken for the meatballs is ready. Let's start forming the meatballs themselves. We take the form in which we will cook and grease it with a small amount of vegetable oil. To make it easier to form the meatballs, you need to wet your hands with water. Then the minced meat will not stick to your hands and the meatballs will turn out beautiful and even.

Sour cream sauce for chicken meatballs

The meatballs are formed. Now we need to prepare the gravy sauce. Add sour cream to a well-heated frying pan with vegetable oil. Add spices here: paprika, basil, nutmeg and ground black pepper, add some salt and mix. When the sour cream and spices have been slightly sautéed, add a small amount of water and one tablespoon of flour. Mix well. When the gravy starts to boil it will become thicker. Add more water and let the gravy come to a boil. You can go the opposite way, first heat the vegetable oil, add flour and fry a little, literally for a minute. And then add sour cream, water and spices.

The gravy has boiled, and now we pour the hot gravy over our meatballs. We send the meatballs to cook in a preheated oven at 180 C until done. In time it is approximately 40-45 minutes.

Ground chicken meatballs are an easy dish that can be served with your favorite side dish, cooked in the oven or in a pan, with a sauce or glaze.

  • 130 g carrots,

  • a glass of boiled water.

To make the dish light and low in calories, we advise you to use a Teflon frying pan. Otherwise, we will need a little more sunflower oil for frying.

Wash the chicken fillet and cut into small slices. You may ask, why do we cut it, you can grind it in a meat grinder? It is possible, but we will take the path of greater resistance so that the chicken meat can be clearly felt in the meatballs. If you also cut the chicken by hand, we advise you not to defrost it completely. Slightly frozen fillets are much easier to cut.

As for carrots and onions, now we only need half of both. Finely chop the onion and grate the carrots. Place the vegetables in a deep mixing bowl. We also send finely chopped parsley there.

We also add the chopped fillet along with the chicken egg and rice to the bowl with the vegetables. Salt and pepper the contents of the bowl and mix. We got minced chicken with rice and vegetables. Let's put it aside.

Chop the remaining onion and carrot halves again and lightly fry in a frying pan for 5 minutes. Set aside. We will add this frying to the gravy for the meatballs a little later.

Let's return to our minced meat. We rinse our hands with cold water so that the minced meat does not stick to them and begin to sculpt round meatballs the size of a quail egg. Place the meatballs in a frying pan and cook them for one and a half minutes on both sides.

  • chicken fillet 900 g;
  • rice 100 g;
  • onions 170 g;
  • rye flour 2-3 tbsp. l.;
  • tomato paste 100 g;
  • sour cream 20% fat 150 g;
  • pinch of salt;
  • water 1.5 tbsp;
  • Italian herbs to taste.

Let's prepare all the necessary ingredients to prepare chicken meatballs with rice.

We thoroughly wash the chicken fillet pieces in cold water, then dry them and pass them through a meat grinder. You can also grind the fillet using a blender. Place the prepared meat in a deep bowl. Thanks to rice, the products are more tasty, nutritious and retain their shape during cooking. This dish can be called budget and, according to many housewives, one of the best and favorite. They are even suitable for children's menus, which allows you to prepare meatballs for the whole family.

  • chicken breast – 1 pc. (600-800 grams);
  • rice – 1 glass;
  • onions – 2-3 pcs.;
  • carrots – 1 pc.;
  • salt, pepper - to taste;
  • vegetable oil.

Pour a glass of water over the rice and cook over low heat until the liquid has completely evaporated. It is better to cook under a closed lid, without stirring during the process.

Grind chicken meat in a blender or meat grinder. We also chop the onions and add them to the minced chicken. You will also need onions for the gravy. That’s why we use half, not all of it.

Combine minced meat with rice. Mix. Season with pepper and salt. Mix the prepared minced meat thoroughly.

We form balls and place them in a heated frying pan with vegetable oil. It's easier to form balls with wet hands. This way they turn out neat and even. Lightly fry the chicken meatballs on all sides in sunflower oil and place in a pan.

Fill the meatballs until they are well covered with water. Grate the carrots on a coarse grater, cut the onion into small pieces. Place all this in a saucepan and bring to a boil along with the meatballs. Add 2-3 allspice peas to make the dish aromatic.

Simmer the meatballs over moderate heat with the lid closed for 20-30 minutes. Salt and season with pepper to taste.

Recipe 7: Dietary meatballs from minced chicken with pumpkin in sauce

Chicken meatballs with pumpkin are a wonderful dietary dish for the main course: they are prepared without rice, with a lot of healthy pumpkin, thanks to which they turn out juicy and tender. Tomato sauce perfectly complements meatballs and is convenient when using side dishes.

  • chicken fillet or minced meat – 500 g.
  • pumpkin – 400-500 g.
  • egg - 1 pc.
  • onion – 1 pc.
  • garlic – 1-2 cloves
  • cheese – 50 g.
  • parsley,
  • salt pepper

For the sauce:

  • onion – 1 pc.
  • tomato – 2 pcs. (or 1 tbsp tomato paste)
  • 1 glass of water,
  • salt pepper

We make minced chicken fillet (if we use fillet), grate or pass through a blender the pumpkin and onion, grate the cheese, pass the garlic through a press, and chop the parsley. Combine the crushed ingredients, add the egg, salt, pepper and mix well.

We form small meatballs from the resulting minced meat and place them in the mold.

Prepare tomato sauce: cut onions, tomatoes, fill them with water, add salt and pepper and let simmer for a couple of minutes. Instead of tomatoes, you can use tomato paste - with it the gravy has a more tomatoy taste and color.

Pour the sauce over the meatballs and place them in the oven at 180C for 30-40 minutes. You can also cook the meatballs on the stove - cover the meatballs with a lid and simmer over low heat. Place the finished meatballs on plates and serve as a separate dish or with a side dish.
