A feature of the nutritional system promoted by Dukan is the daily consumption of bran. Cutlets are a dish that can become the basis of the menu for those who eat in accordance with the requirements of the above-mentioned diet. They are based on meat ingredients, and the recipe successfully includes bran, which few people want to eat in its pure form. You cannot cook conventional minced meat products while following a low-carbohydrate diet. Dukan cutlets are made according to special recipes. These products do not interfere with weight loss.

Cooking features

In order for the cutlets to be suitable for feeding those who follow the Dukan diet, they must be prepared taking into account some important points.

  • When choosing a cutlet recipe, check the list of foods allowed at the stage of the diet you are at. At the “Attack” stage, it is undesirable to use any products other than lean meat, egg whites, bran, and low-fat fermented milk products. It is acceptable to use a small amount of egg yolks, garlic, onions, salt, and seasonings. In subsequent stages, it is appropriate to include greens in the recipe. It is acceptable to use most vegetables (potatoes are not included), starch, and oil. From the third stage, you can use cereals to prepare cutlets.
  • Cutlets, even prepared according to special recipes, can be afforded in limited quantities on the Dukan diet. The bran and some other components included in their composition are allowed in small quantities. The bran itself at the first stage of the diet can be eaten only 1.5 tablespoons per day, at the next two stages - 2 tablespoons, at the final stage - 3 tablespoons per day. The daily portion of cutlets should not contribute to exceeding this norm.
  • Dukan vegetable oil is allowed, but in small quantities. To minimize its consumption, it is advisable to fry the cutlets in a Teflon frying pan, greasing it with oil using a pastry brush or cloth napkin. If you bake the cutlets in the oven, stew or steam them, they will become even healthier.

Chicken cutlets according to Dukan for “Attack”

  • chicken fillet – 0.35 kg;
  • chicken egg (or white only) – 1 pc.;
  • oat bran – 15 g;
  • low-fat kefir – 100 ml;
  • onions – 50 g;
  • salt, pepper - to taste;
  • vegetable oil - as much as needed.

Cooking method:

  • Separate the chicken fillet from the bones, peel the skin, rinse and dry with a napkin.
  • Cut the fillet into plates, beat them with a culinary hammer. Chop as finely as possible with a chef's knife.
  • Grind the bran to flour using a blender or meat grinder. If you don't have kitchen equipment, you can crush them by hand.
  • Mix finely chopped chicken fillet with bran, pour in kefir. Set aside for 20 minutes.
  • Peel the onion, cut a piece of the desired size from it, and chop it finely.
  • When the bran swells, add chopped onion, salt and pepper to the mixture of chicken, kefir and bran. Break an egg into the resulting mass or add just one egg white. Mix thoroughly so that the mass is homogeneous.
  • Place parchment paper on a baking sheet and grease it with oil. Instead of parchment, you can use a silicone mat; it does not need to be greased.
  • Using a large spoon, scoop the minced chicken onto the baking sheet.
  • Preheat the oven to 180 degrees.
  • Place the baking sheet in the oven.
  • Bake the cutlets for half an hour.

Chicken cutlets according to this recipe are tender and juicy, they can be consumed at any stage of the Dukan diet.

Beef cutlets with herbs for “Alternating”

  • lean beef – 0.3 kg;
  • oat bran – 15 g;
  • fresh herbs – 50 g;
  • onions – 100 g;
  • chicken egg – 1 pc.;
  • salt, seasonings - to taste;
  • vegetable oil - as much as needed.

Cooking method:

  • Wash the beef, pat dry with a napkin, cut into small pieces, and grind through a meat grinder.
  • Add finely chopped herbs, pepper and salt to the minced meat, mix.
  • Grind the bran to flour, add to the minced meat, stir.
  • Add the raw egg, mix again, leave for 15 minutes.
  • Peel the onion and cut it into small cubes.
  • Fry a little in a dry frying pan. As soon as the onion begins to brown, add a spoonful of water and simmer the onion until soft. Place in minced meat, mix thoroughly.
  • Grease a Teflon frying pan with oil, using no more than a teaspoon.
  • Wetting your hands with water, form small cutlets from the prepared minced meat. Place them on a heated frying pan.
  • When the cutlets are browned on one side, use a spatula to flip them over to the other.
  • Pour some water into the pan and reduce heat. Cover the pan with a lid and simmer the cutlets for 10 minutes.

Despite the fact that the minced meat does not contain loaf, semolina, or fat, they turn out to be soft and juicy. If greens are excluded from the composition, they can be prepared at any stage of the Dukan diet.

Steamed turkey cutlets (without bran)

  • turkey meat – 0.5 kg;
  • garlic – 2–3 cloves;
  • chicken egg – 1 pc.;
  • low-fat yogurt or cottage cheese – 50 g;
  • salt, pepper - to taste.

Cooking method:

  • Wash the turkey meat, dry with a towel, cut and grind using a meat grinder.
  • Add pressed garlic, raw egg, yogurt or soft cottage cheese. Add some salt and pepper. Knead the minced meat.
  • Form small cutlets and place on a multicooker rack designed for steaming foods.
  • Pour a glass of warm water into the main container of the multicooker.
  • Run the unit in steam mode for 20 minutes.

If you don’t have a slow cooker or steamer at home, turkey cutlets can be fried or baked, following the instructions given in previous recipes.

Dukan cutlets are prepared without flour, semolina, bread, potatoes and other ingredients that housewives are accustomed to adding to minced meat. Despite this, minced meat products turn out juicy and tasty. This dish can become one of the main ones in the diet of a person watching their figure.

  • ground black pepper - to taste;
  • dry seasonings - to taste;
  • mustard - 1 teaspoon spoon;
  • salt - to taste.

Preparation

  1. The bran is ground into flour and soaked in skim milk.
  2. Beef meat, turkey or chicken fillet are processed through a meat grinder. The minced meat will be tastier if you use all three types of meat in equal proportions.
  3. The onion is scrolled through a meat grinder and mixed with minced meat. At the "Attack" stage, the bow is not used.
  4. The remaining ingredients are added to the minced meat: swollen bran, egg, pepper, spices, salt and mustard. If necessary, you can add a little cold water. Mix the minced meat well. Now it can be used to prepare various dishes.

Stuffed cabbage rolls with Dukan minced meat

Ingredients:

  • any minced meat (chicken, beef, turkey) - 300 g;
  • Chinese cabbage - 5-6 leaves;
  • oat bran - 1 table. spoon;
  • onion - 1 head;
  • tomato paste - 1 table. spoon;
  • black pepper - to taste;
  • spices (dry basil, garlic, dill) - to taste;
  • salt - to taste.

Preparation

  1. The leaves of Chinese cabbage are poured with boiling water and covered with a lid for 5-10 minutes.
  2. The onion is finely chopped and added to the minced meat.
  3. A spoon, pepper and spices are also poured in there. Salt and stir until smooth. To soften the minced meat, add 1-2 tablespoons of water.
  4. The minced meat is wrapped in portions in cabbage leaves, cutting off the hard veins from the leaves.
  5. Stuffed cabbage rolls are placed in a thick-bottomed pan.
  6. Tomato paste is diluted in a glass of water and the contents of the pan are poured.
