Chicken cutlets are a versatile dish that the whole family will love. Children eat cutlets made from minced chicken more readily than cutlets made from pork or beef, because they are lighter and less fatty. If the cutlets are not fried, but cooked in the oven and then stewed, then they are suitable for dietary nutrition. You can also steam these.
Chicken cutlets are prepared with various additives; various vegetables, cheese, oatmeal and other grains are added to them. We will prepare chicken cutlets with carrots, fry them as usual in a frying pan, and in order to make them more juicy and tasty, lightly simmer them in tomato sauce.

Ingredients

  • Minced chicken – 1 kg
  • Carrots – 1 pc. (large)
  • Egg – 2 pcs.
  • Tomato paste, salt, dried dill.

Preparation

We will use ready-made minced chicken. But you can cook it yourself. To do this, you need to wash the carcass, separate the meat from the bones, remove the skin and grind it in a meat grinder. And from the skeleton it will turn out delicious light bouillon.
So, transfer the minced chicken into a deep bowl, beat in the eggs, and add salt. Raw carrots grate on a coarse grater, add half to the minced meat, and set aside the rest for the sauce. Instead of carrots, you can add young zucchini to the mixture. And in the fall, pumpkin is perfect. We do not recommend adding frozen vegetables; they will make the mixture too watery.


Mix everything well until smooth. Cover with cling film to prevent it from drying out and let stand for 20-30 minutes, during which time the salt will dissolve. The minced meat is tender, soft and not dense. We will not add bread, semolina or starch to these cutlets. Thanks to the eggs, the cutlets hold their shape well.


Wet our hands in cold water, with quick movements we form cutlets. We recommend wetting your hands before each serving to prevent the minced meat from sticking. Immediately place them in very hot oil. This way they will set immediately and retain their shape. Fry on both sides until golden brown. For frying, we use a mixture of vegetable and butter in a one to one ratio.


We are preparing the dressing. Mix the remaining carrots, 1 tablespoon tomato paste and add dried dill and salt to taste. Fill with hot water and stir.


Place the cutlets tightly in the dish where they were fried.


Pour in the sauce; it should almost completely cover the product. Let the liquid boil, reduce the heat to low and simmer for 10 minutes with the lid closed.


Soft chicken cutlets are juicy and tasty. Serve with fresh, stewed vegetables or potatoes. This recipe can be used to make cutlets from turkey or duck fillet.

Steamed chicken cutlets with carrots turn out to be an appetizing orange color, but the carrots do not greatly affect the taste. Of course, if you didn't take carrots and chicken in equal parts. Crumb wheat bread, soaked in milk, will make the cutlets more fluffy, although also higher in calories. Therefore, if you choose this dish based on its low calorie content, you don’t need to add bread.

Most often I use chicken fillet for minced meat - it’s easier to “work” with. The fillet needs to be washed, and then cut off all excess - films, cartilage. Carrots and onions need to be peeled and washed.

Trim the crusts of the wheat bread, cut the crumb into small squares and place in a bowl. Pour in milk and leave for 10 minutes.

Cut the chicken fillet into small pieces and place in a blender bowl. You can also use a meat grinder with a fine grid.

Place in blender bowl fresh egg, add salt and chicken spices. Grind at high speed for a couple of minutes.

Squeeze out the bread crumb and place it in a blender bowl. Onion cut into 3-4 pieces and place here. Grind for a couple more minutes.

Now place the carrots, cut into 3-4 parts, into the bowl. Grind for a few more minutes until the minced meat is completely homogeneous.

Take a steaming dish - you can grease it vegetable oil. With wet hands, form small, neat cutlets and place in the pan.

Cook chicken cutlets with carrots in a double boiler for 30-35 minutes. If this is a multicooker, then pour water into the bowl, place the mold on top and close the lid. Set the "Steam" mode. If this is a double boiler, then place the container in the desired compartment and set the lever at the 30 minute mark.

After the beep, the cutlets will be ready immediately and you can serve them - with salad, appetizers, or side dishes.

Don't forget to stir constantly.


4. Let's make minced meat. Chop the chicken into large pieces for a meat grinder.


5. Peel the onions and carrots and cut them into large pieces.


6. Grind the onions, carrots and meat in a meat grinder.


7. Callous White bread crumble (you need to grind one piece against another - it will turn out fine curvy babe) and add to the minced meat.


8. Add egg and salt to taste.


9. Mix everything thoroughly until a homogeneous mass is obtained.


10. Form the cutlets and place them in a well-heated frying pan with vegetable oil.


11. The chicken fries very quickly, after 3-4 minutes we turn the cutlets over and fry a little more on the other side over high heat for 3 minutes.


12. Pour the sauce over the cutlets, cover with a lid and simmer for 5-7 minutes.

minced chicken – 0.5 kg
fresh carrots – 3 pcs.

milk – 0.5 tbsp.
white loaf – 3 pieces
garlic – 1 clove

How to cook minced chicken cutlets with carrots:

1. Soak the white bun in milk.

2. Chop the onion in a blender, add bread, egg and beat everything well. If you like it spicier, add a clove of garlic here.

3. Then pour it all into the prepared minced meat from the store, add salt and spices and mix everything well with a spoon. The better we mix, the tastier the cutlets will be. This is a regular version of cutlets.

4. In our recipe we will add carrots, grated on a fine grater, and mix everything together. You will see how the minced meat becomes much fluffier.

5. Then we form cutlets in the form of flat cakes and roll them in flour. They can also be prepared in different options. If you don’t have time to stand and fry them in a frying pan in vegetable oil, place them on a baking sheet, brush each cutlet with a raw egg and place in a preheated oven for 30 minutes at an average temperature of about 180 degrees.
