So, take the chilled products, mix the flour with butter cut into small cubes and a pinch of fine table salt.




Quickly rub the butter and flour with your hands until crumbs form, pour in ice water.
A few ice cubes added to a bowl of water will instantly make the water very cold.




Mix the ingredients with a tablespoon, roll into a ball, wrap in a bag, put in the refrigerator for 20-30 minutes.




Sprinkle the board with flour, roll out the dough into a rectangle, fold it into three layers, and put it back in the refrigerator for 20 minutes.

Step by step recipe

The layered poppy seed roll is prepared in two steps. Initially, you need to prepare the filling and dough, then proceed with assembly, as described in the recipe.

  • Since we will be preparing the pie from ready-made, frozen puff pastry, such dough must initially be defrosted. It should not float, but only thaw to make it easier to work with.
  • Unroll the thawed dough on a clean kitchen towel, previously sprinkled with flour (you can also use cling film or parchment).
  • Roll out the dough directly onto the towel, not pressing too hard and trying to do it in one direction.
  • The thickness of the dough should not exceed 3 mm, otherwise it will not exfoliate well and our poppy seed puffs will not be so fluffy.

Step 4 - spread the filling and roll it up

  • Beat the yolk until fluffy and, using a pastry brush, brush it onto the top and sides of the roll - this will give a beautiful blush to the finished product.
  • Before baking the product, the oven must be preheated to 170 degrees. We put our product in a hot oven for 20 minutes with the bottom burner on - this will allow the dough to rise and layer, and then we put it in for another 15 minutes with the bottom and top burners on.
  • This approach will allow the dough to rise well and brown. (this recipe describes cooking a roll in an electric oven; for a gas oven, you can use the bottom burner throughout the entire baking time).
  • We do not immediately remove the finished roll from the baking sheet, but let it cool completely, after which the product can be cut into portions in the form of individual buns.

And although this recipe involves creating one roll, you can make portioned rolls at once by cutting the raw roll into pieces, and only then baking it. Also, the finished product can be sprinkled with powdered sugar if desired and served as delicious scones for tea.

Prepared in layers with poppy seeds, you can dilute them with some other filling, this will make our roll even tastier and richer. For example, you can add nuts and make a roll with poppy seeds and nuts.

  3. Pour 4 tbsp into the poppy seed. l. natural honey. To make the filling juicy, you need to use liquid honey. If your honey is thick, it is recommended to melt it in the microwave. Mix the poppy seeds and honey thoroughly to distribute the latter evenly.

  4. Walnuts need to be slightly chopped using a kitchen knife. For the filling you will need 7 tbsp. l. walnuts. Mix all products thoroughly.

  5. Let's start preparing the test. For the roll you will need 500 g of puff pastry. You can make it yourself or use a ready-made product. Sift through a sieve about 1-2 tbsp. l. flour and sprinkle the work surface. Place the dough on the work surface and roll it out with a rolling pin until it takes on a rectangular shape. The thickness of the rolled out dough should be approximately 1-2 mm.

  6. Spread all the filling evenly over the rolled out dough. You need to leave 1 cm at the edges so that the roll wraps well.

  7. Carefully roll the dough and filling into a roll.

  8. Transfer it to a baking sheet lined with parchment paper or foil. In order for the roll to fit on the baking sheet, it must be wrapped in a ring shape.

  9. We make 1.5-2 cm cuts along the edges of the roll. After this, straighten the roll a little.

I had enough ingredients for two rolls, which were conveniently placed on a baking sheet.

Ingredients:

  • Milk – 120 ml.
  • Butter (margarine) – 50 g.
  • Puff pastry (yeast) – 900-1000 g.
  • Sugar – 60 g.
  • Powdered sugar for decoration;
  • Poppy – 150 g.

Preparation

  1. Place the puff pastry in a warm place to defrost quickly.
  2. Grind the poppy seed in a mortar or blender.
  3. Pour milk into a small saucepan, put butter there, add sugar. Simmer over low heat until sugar and butter dissolve.
  4. Now pour the poppy seeds into the milk and stir. Cook over low heat for 5 minutes until soft. Leave the swollen poppy seeds to cool.
  5. Roll out the dough and divide into 2 rectangles.
  6. Spread each one with a layer of poppy seed filling. Now just roll them up.

  • Puff pastry (without yeast) – 500 g.

  • Sugar – 100 g.
  • Butter – 50 g.
  • Milk – 1 glass;
  • Raisins – 30-50 g.
  • Chopped nuts – 40 g.
  • Egg for lubrication;

Preparation

  1. Grind the poppy seeds in a blender (although you can leave it like that), then pour in milk. Bring to a boil over low heat, then let cool gradually. Add butter and sugar to the still hot poppy seeds and mix well.
  2. Pre-soak the raisins in hot water for 5-10 minutes to make them softer.
  3. Defrost the dough and roll it into a rectangular layer.
  4. Place the poppy seed filling on it, sprinkle it with nuts, and roll it up.
