To implement this recipe, take one sea bream, two green leeks, pitted olives, a little fresh thyme and rosemary, Provençal herbs, two tablespoons of olive oil and a teaspoon of balsamic vinegar, a few slices of lemon. Clean the fish and rinse well inside and out. Rub with olive oil and balsamic vinegar, salt and pepper, and Provençal herbs. Remove the top leaves from the leek and pour boiling water over them to make them flexible. Cut the white part of the onion into rings and line a baking dish with them, adding thyme and rosemary, a couple of slices of lemon. Finely chop the remaining lemon and olives.
