Rolled oat flakes (long-cooking) ground in a blender, added whole grain flour. Beat the eggs a little with sugar, add coconut oil (melt it slightly), molasses, soda, lemon juice, cinnamon. Combined with the flour mixture and kneaded the dough. The dough is not cool and sticks to your hands. With hands soaked in water, I rolled balls the size of Walnut, shaped it into a flat cake, about 1 cm thick. Placed it on a baking sheet covered with parchment paper, adding chocolate drops to each flat cake. The cookies greatly increase in size during baking, so I advise you to place them at a reasonable distance and not make the cakes large. Bake in a preheated oven at 180 degrees for about 13 minutes, until lightly golden.

It is important not to overdry the cookies! They should be soft when pressed on top, then when they cool down they will have a crispy crust and soft inside. From this amount of ingredients I got 38 pieces. I store the finished cookies in a tightly closed box.

Sugar cookies made with molasses and spices - amazingly aromatic, incredibly crumbly cookies! Molasses gives the dough a special structure, so I don’t recommend replacing it with anything.

Ingredients:

  • Sugar – 1/3 tbsp.
  • Unscented vegetable oil - 3/4 tbsp.
  • Molasses - 1/4 tbsp.
  • Egg - 1 pc.
  • Flour – 2 tbsp.
  • Soda - 2 tsp. (without slide)
  • Salt – 1/2 tsp.
  • Ground cinnamon - 1 tsp.
  • Fresh grated ginger 1 tsp. (or 1/2 tsp dry ground)
  • Ground cloves - 1/2 tsp.

Preparation:

Combine sugar vegetable oil and molasses (I used caramel molasses, but you can use black molasses). Add the egg and mix well. Mix sifted flour, soda (not slaked, it will be quenched by the acid of molasses), cinnamon, salt, ginger and cloves. Combine everything and mix well. Cover the dough and place in the refrigerator for 1 hour (refrigerate the dough for easy handling).

Make small balls of dough with a diameter of 2.5 cm (about 50 pieces - a full baking sheet). Place on a baking tray covered with baking paper (or greased) at a distance from each other (as the balls will spread during baking). Bake at 200 degrees for 8-10 minutes. Leave the cookies on the baking sheet for 2-3 minutes (they are very soft right away and may fall apart), and then cool on a wire rack.
