Ingredients for the dough:

250 g cottage cheese (not too wet)
1 tbsp. kefir
1 egg
1 tsp salt
1 tbsp. l. sugar without top
1 tsp. with a heap of baking powder
3 tbsp. flour

Preparation

Pour kefir into a cup, add baking powder, salt, sugar, egg, cottage cheese, mix everything thoroughly, add sifted flour and knead a soft, sticky dough (do not add excess flour! - immediately after kneading, this dough should be sticky and viscous, then it thickens as the extent of gluten swelling).

It is better to take cottage cheese for the dough that is not grainy. If the cottage cheese is grainy, first rub it through a sieve - the grains of cottage cheese in the dough will not disperse and the pies will turn out in brown fried pimples.

Cover the dough with a cup and leave for 20-30 minutes for the gluten to swell.

Make the filling according to your wishes and the availability of products (see fillings for pies). For example, cabbage stewed with boiled egg and fresh dill; mashed potatoes with onions fried in butter or with fresh green ones; green onions with butter and a boiled egg.

Roll out the dough for pies on a table dusted with flour (if the dough sticks to the table, add more flour to the table) into a layer 0.5-0.7 cm thick.

2. Sift the flour and add it in parts to the resulting mixture of kefir and eggs, mixing everything with a whisk until smooth. I indicated the amount of flour approximately, you may need a little more or a little less, look at the consistency.

3. The consistency of the dough should resemble thick sour cream. Lastly, add baking soda to the dough. If kefir is not sour enough, soda can be quenched with vinegar.
