  • 1/3 tsp. salt;
  • 1/3 tsp. soda;
  • 1/3 tsp. cinnamon.

Measure out the required amount of oatmeal, pour into the bowl of a food processor, and grind. Pour into a bowl, add honey and eggs. Add sugar, salt, soda, cinnamon. Measure out the required amount of raisins and nuts. Stir with a spatula - the mass will be lumpy, but after 5-7 minutes it will moisten, everything will turn out great. Using a spoon, place small mounds of dough on a baking sheet (cover it with pastry paper), leaving enough space between them - the cookies will slightly increase in size during baking. Place the baking sheet in an oven preheated to 180 degrees for 15 minutes.

Tip: if desired, raisins or part of them can be replaced with other dried fruits - dried apricots, dried cranberries, figs.

Quick nut cookies without flour

The recipe comes in handy when you need to recycle proteins. Or when you want something sweet, but in a healthy way. And also when there are unexpected guests on the doorstep, and you need to quickly come up with something for tea. In general, he just helps out, that's all.

Ingredients:

  • 1 chicken protein;
  • 300 g walnuts;
  • 70 g sugar;
  • 1/3 tsp. salt;
  • 1/2 tsp. cinnamon.

Grind two thirds of the nuts into fine, fine crumbs, chop the rest into small pieces. Mix with each other, add cinnamon. Beat the egg white until stiff, gradually adding salt and sugar. Combine nuts and protein. Spoon the dough onto a baking tray lined with baking paper, leaving enough space between them. Bake at 180 degrees for 10 minutes.

Ingredients:

  • 225 g flour;
  • 100 g honey;
  • 2 tsp. baking powder;
  • 1 tsp. soda;
  • 1/2 tsp. salt;
  • 1/2 tsp. cinnamon;
  • 120 g butter;
  • 100 g sugar + sugar for sprinkling cookies.

Mix flour, cinnamon, salt, soda, baking powder. Add cold butter, grated. Grind into crumbs, add honey. Mix.
Form balls the size of Walnut, spread them in sugar, roll them and place them on a baking sheet lined with baking paper, leaving sufficient distance. Bake at 180 degrees for 10-12 minutes.

Tip: If you wish, you can make a vegan version of these cookies - just replace the butter with vegetable margarine.

Ingredients:

  • 300 g corn flakes;
  • 100 g nuts;
  • 100 g dried fruits;
  • 100 g sugar;
  • 3 chicken proteins;
  • 1/3 tsp. salt.

If necessary, chop dried fruits and chop nuts into crumbs. Whisk egg whites, gradually adding salt and sugar. Grind a third of the corn flakes into crumbs. Mix egg whites, corn flakes (powdered and whole), nuts and dried fruits. Spoon the resulting mixture onto a baking sheet lined with paper. Bake at 180 degrees for about 15 minutes. While the cookies are hot, handle them very delicately. Once cooled, it will become crispy and stop breaking.

Tip: pay attention to the packaging of corn flakes, read the ingredients. If they don't contain sugar, you may want to slightly increase the amount of sugar in the recipe.

Quick cottage cheese cookies

Crispy, with a distinct creamy note and a milky aftertaste, these cookies are great for recycling cottage cheese that is about to go sour.

Ingredients:

  • 230 g cottage cheese;
  • 100 g butter;
  • 1 egg;
  • 100 g sugar;
  • 200 g flour;
  • 1/3 tsp. salt.

Grind the softened butter with sugar, add salt, egg, mix again, then add the cottage cheese and combine the mixture until smooth. Add flour. The dough will be thick, quite dense - form it into balls in any way convenient for you (with two spoons or hands dipped in water), place them on parchment paper at a sufficient distance from each other. Bake at 170 degrees for about 30 minutes.

Tip: for taste cottage cheese cookies was more interesting and non-trivial, try adding a little lemon zest to the dough.

Raspberry cookies in a hurry

Quick cookies in a frying pan

Don't have time to heat up the oven? Cookies in a frying pan will save you - of course, they are somewhat different from the one you are used to, however, they are not inferior to them in quality and original flavor shades.

Ingredients:

  • 3 tbsp. l. sour cream;
  • 3 tbsp. l. vegetable oil;
  • 1 yolk;
  • 100 g sugar;
  • 1/3 tsp. salt;
  • 1/2 tsp. soda;
  • 1.5 cups flour.

Grind the yolk with sugar and salt. Add sour cream and vegetable oil. Pour flour mixed with soda into a homogeneous mass. Knead the non-sticky soft dough. We form it into a “sausage” with a diameter of about 5 cm. Cut it into circles. Place the resulting cookies on a dry, heated frying pan, fry at a temperature slightly below average for 3-4 minutes on each side - the finished products should be rosy and golden. Remove from heat - the cookies are soft when warm, and after cooling they acquire a characteristic crispiness.

Tip: if you want to improve the appearance of the cookies, before frying, slightly squeeze the surface with a meat hammer - a simple, attractive pattern will be imprinted on the dough.

Instant banana cookies

An example of healthy cookies for children. However, adults eat it with no less appetite. It comes out quite dense, but at the same time pleasant, not cloying, restrained in taste.

Ingredients:

  • 1 banana;
  • 10 ml vegetable oil;
  • 1/3 tsp. salt;
  • 1/3 tsp. soda;
  • 1/4 cup sugar;
  • 250 g flour.

Mash the banana with a fork, add sugar, salt and soda, mix with vegetable oil until a homogeneous mass is obtained. Add flour, knead soft dough, and form into a bun. We put it away in freezer for 10 minutes (in the refrigerator for 1 hour), after which we roll out the dough into a layer 3-4 mm thick, cut it into diamonds or rectangles with a knife, bake at a temperature of 10 degrees for about 10 minutes.

Tip: to make the cookies as fragrant as possible, take an overripe, darkened banana.

Quick cookies with jam

Cookies from childhood - that delicious one creamy taste, mixed with a bright berry note.

Ingredients:

  • 100 g butter;
  • 2 eggs;
  • 1/3 tsp. salt;
  • 1/3 tsp. soda;
  • 300 g flour;
  • 100 g sugar;
  • jam to taste.

Grind the softened butter with sugar, add salt and soda, add the eggs one at a time. Mix the resulting mass with flour - the dough should be soft, but not sticky. Form balls the size of a walnut and place them on a baking sheet. Use your thumb to make a depression in the center and fill with a small amount of jam. Bake cookies at 200 degrees for 15 minutes.

Tip: if the jam you want to use seems too runny, mix it with a spoon of starch.

Quick cookies “Worms”

Don't want to roll out the dough and don't like spooning it onto a baking sheet? Take out the meat grinder, the good old Worms cookies are on the air. It couldn't be simpler!

Ingredients:

  • 200 g butter;
  • 2 cups of flour;
  • 1 egg;
  • 1/2 cup sugar;
  • 3 tbsp. l. cocoa;
  • 1/2 tsp. salt.

Beat softened butter with sugar and salt, add egg. Mix with flour and cocoa. We pass the resulting dough through a meat grinder, tearing off the result of twisting into short pieces. Place on a baking sheet and bake at 200 degrees for about 12 minutes.

Tip: if you wish, you can make non-chocolate “worms” - remove cocoa from the dough, use one yolk instead of an egg.

Simple Sugar Cookies

Absolutely stunning cookies with an amazing creamy aroma. Not the cheapest, but perhaps one of the most luxurious in the category of recipes that can be implemented in a matter of minutes.

Ingredients:

  • 300 g butter;
  • 3 eggs;
  • 1 cup of sugar;
  • 1/2 tsp. salt;
  • 2.5 cups flour.

In the bowl of a food processor, mix butter, salt, sugar and eggs, gradually add flour. Knead a soft, non-sticky dough, round it, place it on a sheet of baking paper and roll it out into a layer 3-4 mm thick. Cut into diamonds or squares with a knife and place in an oven preheated to 180 degrees for 12-15 minutes.

“Quick” kefir cookies

Ingredients:

  • 250 g flour;
  • 1/2 cup sugar + sugar for sprinkling;
  • 1 glass of kefir;
  • 2 tbsp. l. vegetable oil;
  • 1 tsp. without a slide of soda;
  • 1/2 tsp. salt.

Mix kefir, sugar, salt, butter. Sift flour and soda and combine with liquid mixture. Knead a loose, soft dough, roll it into a layer on a sheet of baking paper. Sprinkle evenly with sugar. Bake at 200 degrees for 10-15 minutes. Immediately after removing from the oven, cut into diamond shapes.

Tip: to “ennoble” the simple taste of kefir cookies, add half a teaspoon of cinnamon to the dough.

5 ideas for decorating cookies in a hurry

Since we are talking about quick cookies, by default it is believed that there is no need to decorate them at all - quickly made, quickly eaten. However, sometimes circumstances require that the hostess decorate such baked goods at least minimally - for example, if we are talking about cookies for unexpected guests. What can be done with a little effort and a little time?

  1. Melted chocolate is a lifesaver for such cases. Place the finished cookies on a flat surface, wrap a few squares of chocolate in a cornet and melt in microwave oven. Using a warm liquid mixture, draw random stripes on the finished cookies - this is not icing, but it’s very beautiful.
  2. Before putting the cookies in the oven, beat 1 egg white with a little sugar. Brush each cookie with it and sprinkle with nuts. A simple decoration, but elegant and beautiful.
  3. While the cookies are baking, you can quickly cook the simplest sugar syrup, grease the finished cookies with it and quickly, before the mass has cooled and hardened, sprinkle seeds, nuts, and sesame seeds on top. Healthy!
  4. Another quick option for decorating cookies is using chocolate. To do this, you need to melt a bar of “black gold” in a water bath, and then dip each cookie halfway into the resulting mixture. Fast, simple, affordable and, of course, incredibly tasty.

These chocolate raspberry cookies will especially appeal to those who like to dip cookies in coffee/tea or just crunch them. Wheat flour can be completely replaced with crushed cereals(I cooked 50/50). You may need more or less flour, depending on the quality of the flour and the consistency of the jam. According to this recipe, you can prepare cookies not only with raspberry, but also with any other jam to your taste. Adjust the amount of sugar depending on the sweetness of the jam; you can cook without sugar. And most importantly, do not overcook the cookies in the oven; they should turn out crispy on top and soft, moist on the inside.

Ingredients

To make chocolate raspberry cookies you will need:

100 g oatmeal, crushed into flour;
100 g wheat flour;
½ cup raspberry jam;
5 tbsp. l. vegetable oil;
1-2 tbsp. l. sugar (I use Demerara sugar);
2 tbsp. l. cocoa powder;
1 tsp. baking powder;
pinch vanillin and salt;
1 tbsp. l. powdered sugar.

Cooking steps

Mix raspberry jam with vegetable oil.

Add sugar.

Mix dry ingredients: floured oatmeal, wheat flour, baking powder, salt, cocoa, vanillin.

Gradually (in 2-3 stages) pour the dry mixture into raspberry jam with vegetable oil.

Gently (without extra effort) mix the dough.

Divide the resulting dough into 16 parts.

Roll into balls.

Roll the balls in powdered sugar.

Press the balls with your palm, transfer to baking paper and bake in a preheated oven for 10-12 minutes at 180 degrees. You can press it lightly with your fingers, I did different versions.

Chocolate-raspberry cookies will be a great addition to a cup of tea or coffee.

Cooking method

    Remove the butter from the refrigerator in advance so that it becomes soft. Place the softened butter in one container with the sugar and beat with a mixer for about 3-4 minutes until light in color.

    Add eggs to the butter mixture one at a time, beating thoroughly each time until smooth at medium speed. Once the texture becomes smooth, increase the mixer speed and beat the mixture for 2-3 minutes. The texture of the finished mixture should be like a thick cream.

    Sift flour with baking powder. Gradually add the flour mixture into the butter-egg mixture in small portions, carefully stirring the dough with a spatula each time. After adding the flour completely, add vanilla extract to the dough and mix the dough thoroughly again, it should be thick but soft.

    Divide the raspberries into 3 equal parts and add them into the dough in portions, each time mixing the dough with the berries with a spatula; it should turn out thick but sticky. If the dough is liquid, you can add a little flour to obtain the desired consistency. Turn on the oven and preheat to 180 degrees. Roll the dough into small balls, flatten them a little and place on parchment, bake for 10-12 minutes.

    Ready cookies should be matte, a slight blush is possible.
