Preparation

  1. Sift the flour into a deep cup, add baking powder, granulated sugar and finely grated lemon zest, mix well.
  2. Add butter, cut into small pieces, to the flour mixture. Rub the butter into the flour mixture with your hands until “wet” crumbs form.
  3. Add the yolks to the butter and flour mixture and knead into a soft, elastic dough.

  5. Wash lemons and oranges well with hot water, you can even use a brush to wash off the chemicals that are often sprayed on them before transport.

  11. Then beat the eggs into the sugar mixture with lemon and orange juice added to it, mix well until smooth and leave for 20 minutes, stirring from time to time.
  12. Remove the dough from the refrigerator and roll it into a round layer about 2 millimeters thick. Place the rolled out sheet of dough into a pan greased with vegetable oil or lined with baking parchment.
  13. Pour the filling onto the crust and stir well first.
  14. Bake the citrus pie in an oven preheated to 180 degrees for about 40 minutes, the pie filling should become dense.
  15. While the cake is baking, prepare protein cream. To do this, first beat the whites with salt with a mixer, and then add the required amount of granulated sugar and continue beating until stable peaks form.

How to bake:
