This option can easily replace bread. The flatbreads are spicy and juicy. To prepare them you need to take:

  • half a glass of sour cream;
  • the same amount of melted butter;
  • a glass of rye flour;
  • a couple of tablespoons of grated cheese;
  • two eggs;
  • a little salt;
  • a bunch of parsley.

To begin with, grind the sour cream with butter and flour. Add salt. Mix everything thoroughly. If necessary, add a little water. The dough should be quite stiff. Roll it out into a layer and cut out flat cakes. prick with a fork in two places. Lightly fry in a frying pan with vegetable oil on both sides. Combine cheese with eggs and beat. Grease the cakes. Fry again, but until the dough is ready. Served hot.

This version of a delicious flatbread can easily become a complete side dish for a meat dish. For it you need to take the following products:

  • kilogram of potatoes;
  • four tablespoons of flour;
  • six tablespoons of milk;
  • a couple of onions;
  • four tablespoons of butter;
  • a little salt.

Boil the potatoes and grate them. Flour is mixed with milk. Add to potatoes and stir thoroughly. The onions are peeled. Fry until golden brown in a frying pan with vegetable oil. Potatoes with milk are placed on the onion. Form a cake with a spatula. Cover with a lid and fry for about ten minutes. Then they turn it over and hold it for the same amount. If necessary, simmer covered until the dish is ready.

Delicious bread replacement

This recipe is distinguished by its simplicity. It's quick to cook. The result is simple flat cakes that are quite fluffy. Their advantage is that they can be served with sauces and sweet fillings. For this recipe you need to take:

  • three hundred grams of flour;
  • 150 ml water;
  • a pinch of salt;
  • a couple of tablespoons of vegetable oil;
  • a teaspoon of vinegar;
  • half a teaspoon of soda;
  • vegetable oil for frying.

The flour is thoroughly sifted. Make a hole in it and add salt. Pour water, add soda, quenched with vinegar. Add a couple of tablespoons of vegetable oil. Knead the dough, soft in structure. Cover it with a towel for ten minutes. Divide the dough into balls. Each is rolled out into a thin flat cake. Pour vegetable oil into a frying pan and heat it. Fry each flatbread on both sides until done. The finished cakes can be greased with a piece of garlic. Then they should be served with soups. Or you can use such cakes as a base for jam.

Many people mistakenly believe that flatbread is just a piece of dough, without taste or smell. But that's not true. This dish can be prepared according to different recipes. This is how you get tender and aromatic lazy khachapuri, based on green onions and cheese. You can make flatbreads filled with green onions or ham. There are really a lot of recipes. Flatbread prepared at home in a frying pan can be both a bread replacement and an excellent dessert. And the simplest options are prepared from the simplest ingredients, for example, with water and without yeast. And some people prefer fluffy flatbreads made with kefir or sour cream. They are flavored with sour cream, sauces or jam.

Making homemade flour tortillas - how to make, recipe and photo

I learned a long time ago about cooking Indian flatbreads in a frying pan and baking Arabic pita with a pocket inside, and I read and watched videos of how they do it. I always wanted to try it. Recently, I often baked pies and sometimes there was a piece of dough left that no longer fit on the baking sheet, and I baked flatbreads from it. Both on the stove (in a cast iron frying pan) and in the oven (on a baking sheet or in the same frying pan).

And then, when I ran out of bread at home, I tried to make the dough specifically for flatbreads (without any pies and buns), so that I got 3 pieces (and it worked more than once!)). Everyone who tried them liked the flatbreads. They are tender and soft (compared to homemade ones, store-bought Uzbek ones are much tougher and drier, apparently they are stored differently).

What kind of dough is suitable for flatbreads?

I tried baking flatbreads from different yeast doughs in water, both lean and regular (with eggs), with oil (vegetable). The taste is a little different. Of course, flatbreads are even tastier with eggs, but even without them, simple lean dough also makes wonderful homemade bread.

Of course, you can make cakes from dough with milk, cream, kefir, yogurt, whey, sour cream - that is, with any dairy and fermented milk products with which you usually make your homemade dough. It will be delicious too. But not everyone drinks milk and fermented milk products; they are not always at hand. And I hope everyone always has water. Simple, accessible and inexpensive. And you shouldn’t overload simple food with any delicacies and excesses; its task is to have its own natural, and therefore wonderful, taste.

Instead of vegetable oil, you can use butter, the aroma will be wonderful. Then the butter must first be softened (kept warm). I am against margarine made from unknown vegetable (possibly palm) raw materials, so I suggest you use vegetable oil (and butter for variety).

Proportions when adding eggs

If you want to add an egg, add more flour. As much as is needed so that when forming balls into flatbreads, the dough does not stick to your hands.

Everything can be easily calculated. Pour the egg into a glass, stir until smooth. See how much liquid you have. That is, the total volume of liquid in the dough is increased by this amount. You need to add flour in proportion to this. But since flour comes in different degrees of moisture (dryness), it is impossible to indicate its exact amount for your dough. Determine by the stickiness of the dough. We kneaded it and it no longer sticks, everything is fine. If it doesn't stick, add a little more.

Or you can reduce the amount of water by the amount (volume) of liquid in the egg. Then the remaining proportions will remain unchanged.

The amount of sugar, salt and butter with a slight increase in the amount of liquid and flour (for example, when adding 1 egg) can not be changed.

About salt

Such flatbreads should be salty, otherwise the simple dough for pies in this case feels rather bland (for my taste). But, fearing to over-salt the dough and thereby slow down the fermentation, I added salt to the flatbreads during baking (the upper part was still raw). Perhaps the right amount of salt will not interfere with the fermentation of the dough, I have not checked yet. I'll tell you later.

If the flatbread isn't salty enough for your taste, just add some salt on top, no big deal.

Flatbread recipe

Dough composition

for 3 pieces with a diameter of 18-20 cm, thickness about 2 cm

  • Warm water – 3/5 cup (150 ml);
  • Yeast – 1.5 teaspoons of dry French yeast (or about 10 g of live pressed);
  • Sugar – 0.5-1 tablespoons (I took 0.5, some people like it sweeter);
  • Flour – 2 cups (320 g). Or a little more, depending on how dry it is;
  • Vegetable oil – 1.5 tablespoons;
  • Salt – 0.5 teaspoon (or add more salt to taste).

How to cook in a frying pan on the stove

  • Make the dough: stir the yeast in warm water (38-40 C) with sugar. As it foams, add flour and salt. Knead. Add oil and press the dough again. Cover and place in a warm, windless place for an hour or more (wait for 2-fold increase).
  • Divide the dough into 3 parts: Knead the risen dough well. If it sticks, add a little flour. Divide into 3 parts, roll them into balls (sprinkle them with a little flour so as not to get stale).
  • Very very heat the frying pan– clean, without oil (I did it on cast iron because it’s convenient. It absorbs and retains a lot of heat, giving it back well to the dough. And empty Teflon ones cannot be heated so much, harmful substances will be released).
  • Make flat cakes: Flatten the ball evenly and make a not very thin flat cake out of it (diameter = bottom of the pan). Or roll out with a rolling pin (sprinkle it and the rolling table with flour). I haven’t started rolling it out lately so as not to stain the table surface (I’ve been lazy). I flattened the balls into cakes directly on my palms. It turns out delicious both when rolling out with a rolling pin and when flattening the dough in your hands.
  • Bake: Immediately place the resulting flatbread in a hot frying pan and bake over fairly high heat (slightly less than maximum) - you can immediately add salt to the top of the flatbread if necessary. Your stove may differ in properties, try and adapt.
  • Baking and doneness: As soon as you see that the edges of the cake have turned white and pulled up, and it itself has become a more even matte color, it’s worth taking a look (pry it with a spatula). If light or moderate brownish spots (with reddish spots) have already appeared there, immediately turn them over to the second side and bake until done (the same spots). Keep an eye on the flatbread. Everything happens quickly, about 3 minutes on each side.
  • How to fold: Bake all the cakes quickly. Place each ready-made one on a plate (one on top of the other, like pancakes) and cover with a towel. As soon as the third cake is ready, put them in a plastic bag and tie it (or let them cool a little under a towel, but no longer than 5 minutes, otherwise they will dry out).

Storing tortillas

I stored the tortillas in a sealed bag for 2 days at room temperature. And then on the third day, which we didn’t have time to eat, I placed it in a bag in the refrigerator (remembering that store-bought Uzbek flatbreads and Armenian lavash quickly become moldy when stored for a long time). It tasted drier after being refrigerated.

Perhaps the tortillas can be stored longer. But, sorry, they are eaten so quickly that this storage experiment of mine was a pure accident.

As soon as the flatbread is ready, while still hot, the family immediately tears it into pieces... and there is nothing left to store...)))

The taste is quite delicate, they are soft and bendable. Cooled - also delicious. We eat instead of bread.

If the cake leaves burnt spots on the pan

Look carefully. If, after some successfully baked cake, something sticks to the pan, you must definitely clean it off with a wooden spatula. Otherwise, these places will then burn and spoil the taste of the next cake (they will stain it with black burners, and the taste will be bitter in this place).

Keep an eye on the pan. Before laying out the cake, it should be smooth and clean. There is no need to lubricate it with anything (only when you take a completely new frying pan, grease it all with oil before heating, not too much, lightly).

Option for preparing flatbreads in the oven

Very tasty, tender, hot flatbread that anyone can bake at home

You need to do the same thing, only you need to heat up not the frying pan, but the oven (to the maximum, 280-300 degrees C, approximately).

If you bake on a baking sheet, sprinkle it lightly with flour and lay out the cake. Bake quickly in a very hot oven. As soon as the smell starts (it’s almost a couple of minutes with a well-heated oven), immediately look at how it’s doing and take it out.

If you are baking in the same frying pan, but in the oven (not on the stove), it is better to heat the frying pan together with the oven and quickly place the formed flatbread on its hot bottom.

No need to turn over.
