  • onion, two large onions, more as possible
  • mayonnaise 1 jar (190 g)
  • spices for fish, to your taste
  • hard cheese 150 grams
  • vegetables set: carrots, green peas, cauliflower, broccoli (I use a set of frozen vegetables) - 400 grams

Preparation procedure:

1. Wash the fish, clean it and cut it into portions, selecting the bones first. Place the fish in a bowl and add salt (I like it with sea salt), then add spices, onion cut into half rings and pour mayonnaise over everything. The result is a marinade that we leave for 10 minutes.

2.At this time, grate the cheese. If we take vegetables that are not frozen, we chop each vegetable differently.

3.Take a baking dish and grease it with vegetable oil. In the prepared form, put a layer of marinated fish with onions, level it, then a layer of vegetables, and top with grated cheese.

4. Preheat the oven to 180 degrees and add the fish. Bake for 20 minutes (the cheese should melt). After baking, cool slightly, cut into portions and……. Bon appetit!

Recipes for cooking fish are very diverse, today I will tell you the simplest one, and for some, maybe it will be the most delicious fish, who knows? 🙂 If you, like me, like to fill your freezer with frozen foods and then cook them in portions, then take out a couple of pieces of frozen fillet or “steaks” and leave until completely defrosted. By the way, do you usually defrost food naturally or in the microwave?

Turn on the oven to heat up to 220 degrees. We tear off two large pieces of foil and lay them on the table. We take any vegetables our heart desires! I use non-starchy ones, they are lower in calories. We wash them well, clean them and cut them as desired. Yes, today I’m talking about cooking techniques rather than a strict recipe.

These can be bars, circles, or squares - whatever you like. We place the vegetables in half on two pieces of foil in a heap or arrange them in a tower; carrots and onions should be placed in the lower layers so that they cook faster in the juice flowing to the bottom, then add a little salt and pepper. Roasted vegetables in the oven turn out magical!
Take the defrosted fish, blot the excess water with paper towels, salt the fish fillet as desired and pepper it on both sides. Place it on top of a tower or a handful of prepared ingredients. The oven-baked fish, the recipe for which I am sharing, turns out very tender because it is cooked with steamed vegetables. Place leaves or sprigs of your favorite fresh seasoning on top, for example, basil, oregano, thyme. Sprinkle everything with olive oil and the juice of a lemon wedge.

We wrap the prepared fish dishes in the edges of the foil so that it forms a strong, dense lump through which steam will not escape during baking. If the edges of the foil are a little short, you can cover it with another layer on top. The main thing is that it lies with the reflective side inward. Now the fish in foil should sit in the oven for 20-30 minutes. I won’t tire of repeating that everything depends only on your oven!
We take the fish fillet with vegetables out of the oven, check for doneness, carefully unrolling the foil with kitchen tongs so as not to scald your hands with the steam. The fish and vegetables should become soft. If the ingredients have not reached the desired state a little, fold the foil back and put it in the oven for another 5 minutes. We repeat the process 😉
As you can see, cooking fish in foil with vegetables turned out to be very easy and quick. Quick recipes made from simple ingredients can be very tasty and healthy!
