How long to cook the right blueberry jam. Preparing jam for the winter from blueberries - recipes Recipes for jam from Scandinavian blueberries

In different regions of our country, blueberries are called differently: crow-berry, blueberry, blueberry, and even chernega. However, not everyone knows that this particular berry is the record holder for the content of anthocyanins - the most powerful of all natural antioxidants that can prevent the development of cancer.

In addition, blueberries contain tannins, beneficial sugars, pectins, various acids (ascorbic, malic, oxalic, citric), vitamin substances, and microelements (iron, zinc, manganese), which are beneficial affect the work and functioning of the entire body.

So, today let's try to make a very unusual and undeniably tasty treat from this healthy berry that children and adults love so much - blueberry jam with lemon for the winter!

To prepare blueberry jam with lemon, we will need:

blueberries – 1 kg
water – 300 ml
sugar – 1.5 kg
lemon – 1 pc.

How to make blueberry jam with lemon:

1. We begin preparing the jam, as always, by preparing the berries. So, first we carefully sort the blueberries (removing all spoiled berries), and then rinse them thoroughly several times under running water (this is best done in a colander so that all excess water immediately drains from the berries).
2. After this, the already washed blueberries need to be blanched. To do this, collect a sufficient amount of water in a convenient container and send it to the fire. As soon as the water boils, put the prepared blueberries in the pan and boil them for 5-6 minutes. So, thanks to this procedure, the blueberries will remain intact and will not burst during the preparation of jam.
Afterwards, transfer the blanched blueberries to a colander, and pour the remaining broth into a separate pan (after straining it). Please note that we only need 300 ml of decoction.
3. Now let’s prepare sugar syrup based on blueberry decoction. To do this, add the specified amount of sugar to the pan with the broth, and then put the pan on the stove. Bring the syrup to a boil over moderate heat and simmer until the sugar is completely dissolved.
4. At this time, transfer the blueberries into a special bowl for making jam, and then pour them with the prepared hot sugar syrup. Stir everything and bring to a boil over medium heat (as soon as the jam boils, reduce the heat to low, but only so that the jam continues to simmer a little). Boil the jam for 1-2 minutes after boiling, and then remove it from the heat and let it cool completely (remembering to cover the container with a lid or towel).
5. After the jam has cooled, put it back on the fire and bring it to a boil. But while we are waiting for our jam to boil, we simultaneously rinse the lemon thoroughly and prepare (squeeze) all the juice from it into a separate container (without seeds!). Add lemon juice to the pan with jam, mix everything and boil for another 5-7 minutes.
6. Now is the time to start preparing the jam jars. To do this, they need to be washed thoroughly and then sterilized with boiling water or hot steam (at least 2-3 minutes for each jar).
By the way, the lids for the jars also need to be sterilized (to do this, simply pour boiling water over them for a while). Afterwards, both the lids and the jars need to be dried (to speed up the process, this can be done in a slightly preheated oven).
7. Pour the hot jam (almost directly from the heat) into the prepared containers and seal them with lids. Now carefully turn the jars of jam upside down, wrap them in some warm towels and leave them to cool in this form for at least a day.

Blueberries are a berry that is loved by children and adults. It contains so many benefits that it can be safely called a forest pharmacy. This amazing berry is used to make tinctures, jelly, jellies, jams, preserves, or simply dried and then used to make tea.

Now is the season of berries and, if you have already had your fill of them, I suggest you make blueberry jam, which will be an excellent accompaniment to waffles, ice cream, yogurt, cake, or just a tasty and healthy treat for tea on cold winter days.

Blueberry-lavender jam with honey and lemon

Blueberry jam is one of the most popular and quickly eaten treats in our family. Last year I discovered that blueberries pair really well with lavender. I know most people don't associate lavender with food. It is one of those herbs that is widely used in aromatherapy and cosmetics.

However, when used with the right foods and in the right quantities, it imparts a slightly floral yet nutty flavor to dishes. I also used honey as a sweetener in this recipe. Honey goes well with lavender, as well as blueberries.

Ingredients:

  • Blueberries - 1 kg.
  • Honey - 650 gr.
  • Lavender - 1 tbsp. l. fresh buds
  • Lemon - 1/2 zest and juice 1 pc.

Preparation:

1. Grind the lavender buds in a mortar and pestle. Set aside. Place one ceramic or glass plate in the freezer. Later we will need it to test for the readiness of the jam.

2. Sterilize the jars and lids in any way convenient for you: in the oven, steamed, in the microwave or in boiling water.

3. Add blueberries, honey, lemon juice and zest to a large, wide saucepan or enamel bowl. I find that using a wide container for small batches speeds up the cooking time. As the jam cooks, foam will form. It needs to be removed. It does not affect the integrity of the dessert in any way, but makes it less attractive.

4. As your jam begins to thicken, remove a plate from the freezer and place a spoonful of jam on it. Return it to the freezer for two to three minutes. Remove the plate from the freezer and gently push the jam in with your fingertip. If it crumples a little, then the treat is ready. If not, continue cooking for a few more minutes and repeat the test.

While you are testing for doneness, remove the jam from the stove to prevent it from burning.

5. Once the jam is ready, add chopped lavender to it and mix well. Then place it in sterilized jars and close or roll up the lids tightly. This dessert goes well with toast, muffins, buns or ice cream. Make a few extra jars and gift them to your family or friends.

Jam in a slow cooker

Ingredients:

  1. Blueberries - 2 kg.
  2. Sugar - 2 kg.

The washed berries are poured into a multi-cooker bowl, granulated sugar is added on top.

On the display of the kitchen appliance, the “stewing” program is selected, the time is set as follows:

  • 1 hour - to obtain liquid jam;
  • 1.5 hours - medium thickness;
  • 2 hours - thick, well-cooked dessert.

After turning off the multicooker, the finished product is poured into pre-prepared containers.

Methods for storing jam

In order for blueberry jam to retain its properties for a long time, it is necessary to place it in sterilized jars immediately after preparation.

A properly preserved product can be eaten for 3 years, during which time vitamins are not lost.

Jam is stored in dark, cool and dry rooms where the air temperature should not exceed +15 degrees. Hotter conditions encourage mold growth. Cellars and basements are perfect for storing sweet preparations. If there are few jars, you can put them in the refrigerator.

Making blueberry lemon jam is quite easy. I'm surprised why there is almost no one among my friends who uses this recipe. Basically, everyone uses different methods (and there are plenty of them) and grinds

This is the second year I’ve mastered the recipe for blueberry-lemon jam – and I couldn’t be happier! It is very tasty, and also stores well. Here I will make a small digression and allow myself to note: for preserves, marmalade, confiture and other sweet preparations, I like to use jars with screw lids. I almost never use a tin wrench or a seamer - I save all this stuff for compotes and salads. After all, it is much easier to close the preservation using a screw method, and if it contains a lot of sugar and has undergone heat treatment, complete tightness is not an unconditional condition. Although it is not difficult to ensure it: you just need to use a new lid for each jar, that is, not the one left over from last season. They opened the jar and threw away the lid. And for a new twist we bought a new one.

It's simple. As is the blueberry jam recipe itself.

Ingredients

  • 5 cups blueberries;
  • half a glass of sugar;
  • juice of one lemon;
  • a pinch of coarse white salt without additives.

Preparation

Sort through the berries, rinse and place in a colander. Let them dry for about 15 minutes. Squeeze the juice out of the lemon and dissolve the salt in it.

In a non-stick pan, combine blueberries, sugar, lemon juice and salt. Stir the blueberries by lightly pressing them with a wooden spatula until they begin to release their juices. There is no need to try to completely crush the berries; it is enough for them to burst little by little and mix with sugar to form a syrup.

Cook the jam over medium heat for 20-25 minutes, stirring occasionally. When the berry and syrup mixture begins to thicken, stir as vigorously as possible. Then pour into sterile jars and screw on the lids.

Blueberry jam with lemon, closed with screw caps, can be stored at room temperature, provided that the container is first sterilized.
