Traditional Russian cuisine: simple recipes for fried forest mushrooms. Honey mushrooms fried for the winter Fried honey mushrooms for the winter best recipes

Honey mushrooms can be called universal mushrooms. They are prepared in different ways: boiled, dried, and frozen, but the favorite thing, because they taste the best, is fried honey mushrooms. They can be cooked for lunch, or can be kept roasted for the winter.

Frying fresh mushrooms

Let's start with how to cook the collected mushrooms so that you can eat them right away. Fried honey mushrooms are usually prepared with potatoes, but if there are a lot of mushrooms, you can simply pour sour cream over them and season with garlic.

You will need honey mushrooms, vegetable oil, salt and black pepper to taste, garlic, dill, sour cream. Depending on where you collected the mushrooms and what condition they are in, certain pre-treatment is required. The mushrooms are sorted, cleaned of dirt, and washed. The stems will have to be removed as they are too tough to fry. If you feel sorry, cook broth with mushroom stems.

Very clean mushrooms do not need to be washed. When honey mushrooms retain the smell of the earth and trees on which they grew, the dish turns out to be especially tasty. But decide at your own risk. This can only be done with young, unspoiled mushrooms collected in an ecologically clean area.

Will you pre-boil honey mushrooms? Mushrooms fried without boiling are tastier, but old mushrooms must be boiled. Cook for about 20 minutes in water with a medium salt content (you can add salt to taste during frying).

How long to fry honey mushrooms? This may take from 20 to 40 minutes, depending on whether you boiled the mushrooms beforehand, as well as on the amount of product and the amount of moisture. When there are a lot of mushrooms in the pan and they contain a lot of liquid, the cooking time increases greatly. The mushrooms will not be fried, but stewed in own juice. We don't need this. Therefore, first place the honey mushrooms in a heated dry frying pan and, stirring so as not to burn, evaporate the moisture from them.

Now you can add oil and fry until done. If you are going to add seasonings (black pepper, garlic, aromatic herbs), do this a couple of minutes before removing the pan from the heat. In order for the flavor and aroma to develop, the seasonings must be heated, but it takes a long time heat treatment destroys them.

If you are making honey mushrooms fried with potatoes, it is better to cook everything separately and mix it on a plate.

Preparation for the winter

For the winter, honey mushrooms fried in melted butter can be stored in jars. They are prepared according to the same principle as homemade stew: fat prevents the mushrooms from spoiling in the jar and prevents pathogens from entering there.

Pour oil into a deep frying pan, heat it, add salt at the rate of 1 teaspoon per 1 kg of oil. Mushrooms cut into medium-sized pieces are poured into oil and fried until the white steam stops coming out, and then for another 10 minutes.

Using a slotted spoon, move the mushrooms into sterilized liter jars. You need to make sure that there are no air bubbles left inside. Top the fried mushrooms with the remaining oil and wait until the mushrooms in the jar have cooled down. Since the oil will decrease in volume after cooling, it needs to be added to the jar.

When everything has completely cooled down, the workpiece is covered with plastic lids and stored in the refrigerator.

Autumn is a time of year that many associate with the collection of potatoes and the last fruits, but few people notice that at this time there comes a large wave of harvesting mushrooms, which are so loved by our people, who use them both as a main dish and as a side dish The benefits that a person can get from eating mushrooms are often compared to the supply of vitamins that comes with eating pure meat. Honey mushrooms are considered especially useful in this regard - small mushrooms that can be easily prepared for the winter.

Fried honey mushrooms are the best meat substitute on your table

You can determine the number of mushrooms needed for harvesting yourself, based on your needs.

You should know that when frying, mushrooms release a lot of water, so be prepared for the mass of mushrooms to decrease by at least half after cooking!

The cooking process begins with preparing the mushrooms themselves. First you need to shorten the legs of the mushrooms, leaving about 2 centimeters from them. It is recommended to cut the caps that are too large, as large pieces are not cooked as well and do not acquire such a juicy taste. After the mushrooms have been prepared, they should be rinsed under normal water and placed to dry in a colander.

Pour approximately 100 grams of oil into a medium-sized frying pan. You don’t have to wait until the surface gets hot, but immediately pour the dried honey mushrooms into the frying pan. After 10-15 minutes, water will begin to come out of the mushrooms, the level of which can rise to the very edges of the pan - this is in the order of things. All this time you just need to patiently stand over the stove and constantly stir the mass of honey mushrooms, allowing all the moisture to evaporate.

After 25 minutes have elapsed from the start of cooking, you can add spices to the mushrooms to your taste - bay leaf, pepper, salt and dill sprigs. One frying pan requires about half a tablespoon of salt, but, as the saying goes, “there is not enough salt on the table,” so it is better not to be overzealous in using spices.

You can tell when mushrooms are ready by several signs. Firstly, the intensity of water release either completely disappeared or decreased noticeably. Secondly, the surface of the finished honey mushrooms takes on a pleasant chocolate shade. Thirdly, readiness can be determined by the way the mushrooms are separated with a fork - ready-made honey mushrooms can be separated using the device without any effort.

After cooking, honey mushrooms are placed in sterilized jars, after which they can be stored in the basement all winter and even much longer!
