In the oven, fish cutlets. Fish dishes for children Steamed cod cutlets for children

Every housewife should remember that fish on our tables is not just everyday food, but the maximum benefit for the body. It is not without reason that all doctors and nutritionists in the world unanimously assert that fish must be present in the weekly diet at least twice. We will not talk here about all the vitamins, proteins, fats and microelements that are in fish. Let's talk better about how to cook cod fish cutlets. Use the recipes and tips, put a good mood and a piece of your soul into the dish, and you will get a real culinary masterpiece that both young and old family members will approve of.

Many people don’t want to deal with fish because it needs to be cleaned and cut up. There is an excellent alternative to this - buy ready-made fish fillets.

What else can you add to cod fillet cutlets? A slice of stale white bread or loaf, softened in milk. Bread is added for two reasons: firstly, it adds volume, and secondly, it absorbs the juice from the fish, due to which the finished cutlets are juicy and soft.

To bind all the fish mass, add an egg. To make it even more juicy, add a lot of onions, potatoes, zucchini, cabbage, and lard. The cutlets will keep their shape well if you add a little semolina to the minced meat. The addition of cottage cheese or grated cheese will add special tenderness to finished fish products. Well, if you don’t really like the specific fishy smell, add more spices, herbs, and fresh herbs.

Minced cod cutlets

You can make cutlets from almost any fish (for example, pollock, pink salmon, herring, etc.). In our recipe we suggest making them from cod. This type of fish is a real find, it is large in size and has few bones, it is easy to “work” with, and the cutlets are juicy, soft and delicate in texture.

Ingredients

  • cod – 1 pc. (800 g);
  • loaf – 90 g;
  • milk – 100 ml;
  • chicken egg – 1 pc.;
  • onion – 1/2 pcs.;
  • fresh herbs - to taste;
  • breadcrumbs - 5 tbsp. l.;
  • vegetable oil – 60 ml;
  • ground black pepper and salt - to taste.

How to make fish cutlets from minced cod

Crumble the loaf pieces into a bowl and pour milk (you can use slices of day-old white bread).

While the bread crumb is swelling, start cleaning the cod. Rinse the fish under running water, remove the head, tail and fins, and gut it. Cod is often sold already gutted and without the head, so this process may not be necessary. Remove the skin along with the scales from the fish carcass; as a rule, they are easily removed.

Cut the resulting cod fillet into pieces, which place in a blender bowl with a chopping knife attachment. You can also make minced fish from cod using a meat grinder.

Roll the cod and place the minced meat in a suitable bowl.

Peel the onion, wash it and chop it finely. Wash fresh herbs (you can use dill, parsley, green onions) and chop. Add these ingredients to the minced fish.

Beat one egg into the minced fish. This product is necessary to ensure that the cod cutlets do not fall apart when frying.

Squeeze the loaf and place it in a bowl with the rest of the ingredients.

Season the resulting mass to taste with salt and ground black pepper (optional), mix everything thoroughly until smooth.

Form balls from the resulting fish mass.

Place breadcrumbs on a plate. Roll the fish balls in breadcrumbs, pressing them down a little.

Pour vegetable oil into the frying pan and heat it. Place the cutlets into hot oil.

Fry over moderate heat until golden brown.

Hearty and delicious cod cutlets are ready. They can be served with canned green peas. But the best side dish will be potato dishes - boiled, fried, baked in the oven. For example, prepare mashed potatoes, place a few spoons on a serving plate, place chopped fresh vegetables around (cucumber, tomato, bell pepper and herbs), and a fish cake in the center. It will turn out beautiful and very tasty!

Cod cutlets with semolina in the oven

This option is suitable for those who prefer not to fry food in a frying pan until golden brown and crispy, but to steam or bake it. We suggest making cod cutlets in the oven. This cooking method will save you a little time, because you won’t have to constantly stand at the stove to watch the cutlets and turn them over. If you want to get dietary fish cutlets, cook them in a double boiler. These household appliances are a must-have in the kitchen for those who prefer healthy and nutritious food.

Ingredients

  • cod (fillet) – 600-700 g;
  • onion – 1 pc.;
  • white bread (or loaf) – 1 slice;
  • milk – 3 tbsp. l.;
  • chicken egg – 1 pc.;
  • ground black pepper and salt - to your taste;
  • fresh parsley and dill – 6-8 sprigs each;
  • semolina – 1.5-2 tbsp. l.;
  • vegetable oil – 1 tsp. (for greasing the baking sheet).

Preparation

  1. Wash the fish fillet thoroughly, dry it and grind it in a meat grinder using a fine wire rack.
  2. Loaf or bread, as for any cutlets, is better to use yesterday's. Cut off the crust (without it the cutlets will be more tender), break the bread slice into several pieces, place in a bowl and fill with milk. Stir and let stand for 8-10 minutes, the bread will absorb all the milk during this time, there is no need to squeeze it out.
  3. Peel the onion, wash and grind in a meat grinder.
  4. Beat the egg into the milk-bread mixture, add salt and pepper and mix everything until smooth.
  5. Combine the resulting mass with minced meat and onions.
  6. Wash the greens, dry and chop finely. Add it to the minced meat and mix. If you don't have fresh herbs, you can add dried dill and parsley.
  7. Pour semolina into the minced meat, mix everything completely and let stand for 15-20 minutes so that the semolina swells a little. This additive will help the cutlets keep their shape and not spread all over the pan.
  8. Grease a baking sheet with vegetable oil and place the formed cutlets on it. You can give them any shape you want (round, oblong), if you have small children, make fish-shaped cutlets especially for them. Heat the oven to 200 degrees and place a baking sheet in it for 20-25 minutes.
  9. Cod cutlets with semolina are ready, you can serve them either hot or cold. For a side dish, make a light vegetable salad (tomatoes, cucumbers, sweet peppers, cabbage).
Cod cutlets with lard

Cod cutlets with lard are particularly juicy. Buy fresh lard at the market, and when you prepare the cutlets, mince it together with the fish fillet. You can cut the lard into very small pieces; to do this, you need to freeze it slightly (this will make it easier to cut). And yet, in the recipe, only pepper and dried herbs are added from spices; you can use any seasonings for fish dishes to your taste. Basil, lemon balm, thyme, rosemary, and ground nutmeg go especially well with fish.

Ingredients

  • cod (fillet) – 800 g;
  • fresh lard – 100 g;
  • onion (large) – 1 pc.;
  • loaf (or white bread) – 2 slices;
  • milk – 0.5 cups;
  • ground black pepper and salt - to your taste;
  • dried herbs – 0.5 tsp;
  • chicken eggs – 2 pcs.;
  • breadcrumbs – 4-5 tbsp;
  • vegetable oil (for frying) – 40-50 ml.

Preparation

  1. Cut the crusts off the bread slices, place them in a bowl and cover with milk. Leave in this form for 10 minutes so that the bread softens well and is soaked in milk.
  2. Peel the onion, wash it and cut it into several pieces.
  3. Rinse the fish fillets thoroughly and pat dry.
  4. Using a fine rack in a meat grinder, pass through the cod fillet, lard, onion and soaked bread.
  5. Add salt, pepper and dried herbs. Beat in the eggs and mix everything well until smooth.
  6. Form minced cod into patties and roll them in breadcrumbs.
  7. Pour oil into a frying pan and heat it. Fry the cutlets on both sides until golden brown.
  8. Serve delicious homemade fish cutlets with stewed cabbage or oven-baked vegetables (eggplant, tomatoes, bell peppers, zucchini, zucchini).

Fish in a child's diet

Fish contains many nutrients, so it is simply irreplaceable for a child (more details in the article:)

Typically, fish meat is introduced into the diet of children aged 1-1.5 years. At this time, they gradually become familiar with food familiar to adults. It is best to start cooking with minced fish. Chewing such food will not cause any particular difficulties for children. If fish is not an allergen for a child, it can be given to a one and a half year old baby no more than twice in a seven-day period. It is not advisable to combine fish and meat products on the same day. This greatly overloads the toddler’s digestive system.

To prepare fish cutlets for small children, especially one-year-old children, you should choose varieties with minimal fat content, for example:

  • pollock;
  • bearing;
  • zander;
  • cod;
  • pink salmon;
  • crucian carp;
  • carp and others.

It is advisable to use a refrigerated product. Before passing fish through a meat grinder, it is necessary to check and remove even the smallest bones from it.

For children you need to choose low-fat varieties of fish

Cod is not just tasty, but also healthy fish

Cod fish is a resident of the Atlantic and Pacific waters, but it is not such a rare guest on our tables. Cod, like most fish, is useful for us because its meat contains a large amount of polyunsaturated fats and protein, vitamins D, A, E, group B (thiamine, riboflavin, cobalamin, folate), potassium, phosphorus, calcium, sulfur, iron, etc. And, for sure, there is no such person who has not tried cod liver - a storehouse of useful substances!

And a surprise for those losing weight - cod is low-calorie, 100 g of its meat contains less than 70 kcal. Thus, taking into account the additives in the minced meat, one cod fish cutlet contains no more than 85-90 kcal calories! Therefore, cod will not affect your waistline in any way.

In order not to make a mistake when choosing cod in the store, the fish is easily recognizable: the carcass with the head is from 50 cm, small scales with black spots, and on the head under the lower lip there is a characteristic antennae. Naturally, cod without a head is more difficult to recognize, and sellers are not averse to passing off cheaper fish as it.

How to cook cod fish cutlets

Unlike whole fish, cod fillet fish cutlets are absorbed even faster by the body. Therefore, it is preferable, and especially in children's menus, to use cod as the basis for delicious nutritious cutlets.

Once you learn how to make fish cutlets at home, you will definitely begin to avoid counters with semi-finished products, and will begin to give preference to natural fish, because cooking cod is not difficult, fish is easy to process, and the taste of homemade dishes is undoubtedly amazing. It is impossible to compare with store-bought cutlets.

Before making minced fish for cutlets, the fish is defrosted, cleaned of entrails, the head and fins are cut off, and the bones and skin are removed. Then the fish fillet is twisted into minced meat, passing the meat through a medium-mesh grid in a meat grinder, all sorts of “auxiliary” products are added to the minced meat and cutlets are made from it, which can then be prepared in different ways.

For a couple

Steamed, without any foreign smell or taste, minced fish cutlets (recipe with photo) turn out tender and soft, and at the same time very healthy. With semolina

Tender and very pleasant-tasting fish cutlets, just like in kindergarten, are made from minced cod with the addition of semolina. They just melt in your mouth, but at the same time the minced meat behaves obediently while working with it. How are fish cutlets with semolina prepared from cod?

The recipe for very tasty cooked cutlets is simple. We take:

  • ready minced cod – 600g;
  • semolina – ½ cup;
  • onion and raw fresh egg - 1 pc.;
  • medium fat cream – ½ cup;
  • salt and pepper (add to taste).

How long to fry fish cutlets in a frying pan depends on the thickness of the cutlets; the main clue here is the golden crust. Then place the golden cutlets on a baking sheet and keep in a hot (about 180 degrees) oven for about 7 minutes. Juicy and light cutlets are ready!

With oat flakes

Hercules is good because it has an almost neutral taste, while swelling well, giving the cutlets additional softness. For half a kilogram of minced cod you will need:

  • raw rolled oats – ½ cup;
  • milk - 1/3 cup;
  • onion head (medium size);
  • raw egg – 1 pc.;
  • spices and herbs (as much as you want to taste).

Beat the egg a little and mix with milk. Pour rolled oats into this raw “omelet” for 20 minutes. Then mix the swollen mass with minced cod, salt and pepper, add chopped herbs and prepare evenly homogeneous minced meat, kneading it well and slightly beating it on the table. Having formed the cutlets, bread them and cook them in any way (steamed or in a slow cooker, in the oven or in a frying pan).

With cottage cheese

Cottage cheese and cod cutlets are a source of calcium and protein. Prepare it – it’s delicious!

Before making fish cutlets with cottage cheese, you should cool the minced meat a little - it will become more manageable and denser. So, the ingredients:

  • minced cod - 0.5 kg;
  • cottage cheese (fattier) – 250 g;
  • egg - 1 raw;
  • semolina (raw cereal) – 100g;
  • onion head;
  • bread pulp – 150 g;
  • whole milk – about 1/3 cup;
  • salt and spices (to taste).

First of all, prepare the bread - pour milk into a plate and soak for a short time.
Chop the onion finely into crumbs, mix with the fish and add cottage cheese, semolina to the mixture, season with spices and add the soaked bread crumb to the future minced meat. We make medium-sized cutlets and cook them using our favorite heat treatment method. The results are tender and juicy fish cutlets with cottage cheese. The recipe turns out very tasty if you use homemade, full-fat cottage cheese.

With lard

Minced cod can be a little dry, but if you prepare fish cutlets from cod and add lard to it, it will be juicier and more satisfying. Set of ingredients:

  • minced cod fish - 600 g;
  • oatmeal (rolled oatmeal) flakes - 0.5 cups;
  • soft butter – 2 tablespoons;
  • unsalted lard - 100 g;
  • egg – 1 pc;
  • milk - 50 ml;
  • onion - one head;
  • salt, pepper (to taste);
  • vegetable oil - about 100 ml.

We prepare the minced meat like this: in a fish fillet that has been minced in a meat grinder, we put lard, minced in a meat grinder, and finely chopped onion. Add butter and one raw egg, add some salt and pepper. Mix the minced meat thoroughly. And we make breading from oatmeal by passing the flakes through a blender. Next, we make cutlets, bread them in oatmeal and fry them in vegetable oil in a frying pan until tender.

If you cook these dietary fish cutlets in the oven, they will come out a little higher in calories due to the oil, but they will taste even better.

Sauce for fish cutlets

You will need to take:

In fresh fish they have a rich and even bright red color. The next thing that will help you determine the quality and duration of storage is the smell. Cod should not smell of any impurities, and, of course, rot.

You need to approach such a matter with trepidation in order to protect yourself and your loved ones from possible consequences.

Cooking sequence

  2. Cut the fish into small pieces and pass it together with the chopped onion through a meat grinder. If you don’t have a meat grinder, you can easily do the same steps with a blender.

  3. We can add finely chopped onion, fried in vegetable oil, to the already prepared minced meat.

  4. Then add two teaspoons of cream and two tablespoons of oatmeal to our minced meat.

  5. Mix everything thoroughly and add salt, pepper and any spices that suit your taste.
  6. Add two chicken eggs to our mixture and mix the minced meat well.

  7. After these steps, we take cling film, cover our container with minced meat and put in the refrigerator for 25 minutes.

  8. After the time has passed, you need to pour a little flour onto the work surface.
  9. Next, taking a small amount of minced meat in your hands, form a ball. We carry out these steps until all the minced meat is finished.

  10. In a heated frying pan with vegetable oil We lay out our balls. Fry on both sides until golden brown.
