It is known that bananas are one of the most effective natural “antidepressants”. Bananas contain a record amount of nutrients that promote the production of serotonin - the so-called happiness hormone. Eating bananas, according to scientists, is not only a sure way to overcome the autumn blues, but also to prevent depression and support the body in case of chronic fatigue and constant lack of sleep.

Without noticing it myself, I often prepare dishes with bananas in the autumn-winter season, when the weather is depressing and there is a particularly acute lack of sun. I already have a whole selection of desserts and baked goods with bananas, but this banana cake is my absolute favorite. Once I make it, I come back to it again and again.

At first glance, this is a simple and familiar sponge cake with cream, but a little trick in the preparation process allows you to give the cake an amazing aroma and unforgettable taste.

This cake could be called triple banana or absolutely banana, because bananas are present in every component. From weightless and fluffy sponge cake to cream, layer between cakes and, of course, decoration. The autumn blues simply don’t stand a chance! Let's treat ourselves?!

Prepare the ingredients according to the list.

The number of bananas for the cake can be adjusted to your taste. I needed 5 medium-sized bananas, provided that bananas are involved in cooking at each stage.

250 grams of banana pulp will be needed for the sponge cake (I got 2 pieces). The remaining bananas are used as a fruit layer, decoration and component of the cream.

You can use any cream for banana cake according to your taste. I have butter cream with the addition of banana puree.

Let's start with the very “trick” that will give the cake a unique aroma and taste. Let's prepare banana-caramel sauce, which will become a component of our sponge cake.

For the sauce, measure 150 grams of powdered sugar and add 25 milliliters of water.

Bring to a boil over low heat and cook until the mixture turns into a golden-red caramel. Keep an eye on the syrup, monitoring its color change; if necessary, shake the container slightly, but do not stir.

Meanwhile, cut the bananas into small pieces, no larger than 2 centimeters.

When the caramel is ready, add banana pieces, 1 tablespoon of butter and a little vanilla to the container.

Continue to simmer the mixture over low heat until the banana pieces are softened and the mixture thickens. I'm always in a hurry and after a few minutes I start stirring the sauce. As you stir, the banana pieces will dissolve into the caramel, creating a thick caramel-banana sauce. The consistency is somewhat reminiscent of jam or thick jam.

It doesn't look like much, but the aroma and taste are simply magical. I want to abandon all further preparation, sit in a corner and eat it right away.

Cool the finished sauce before adding to the dough.

For the dough, mix flour, baking powder and soda. Add ground spices if using. Sift two or three times. Add the bran and large particles of wholemeal that remain in the sieve back to the sifted mixture.

Beat 100 grams of powdered sugar, vegetable oil and eggs at room temperature until thick and bubbles appear. I also add a few drops of flavorings - rum, vanilla and almond.

Add banana caramel sauce and yogurt and mix everything well.

Add the sifted flour mixture and stir until smooth.

Pour the dough into a greased pan lined with baking paper.

Bake in an oven preheated to 180 degrees for 50 minutes. After 15-20 minutes, when the top of the sponge cake is browned, reduce the temperature to 160 degrees.

Turn off the oven and leave the sponge cake in the oven for another 10-15 minutes. Then turn over and leave on a wire rack to cool completely. I am not known for patience and take the biscuit out onto the balcony to cool as quickly as possible.

After some time, when the biscuit has cooled down on the outside, but is still quite warm inside, I cut it into 2 parts and leave it until it cools completely.

For cream: Cut the banana into small pieces, add lemon juice (I used the juice of half a lime) and puree until smooth. It is better to take a banana that is slightly unripe - the cream will be denser. Add lemon juice to taste - so that the puree is not too sour, but also does not darken due to its lack.

Mix butter at room temperature, not too soft (if you touch it with your finger, there should be no hole left), mix with a small amount of powdered sugar (100-150 grams to start). Beat until smooth, 5-7 minutes. Continuing to beat in small portions, gradually add banana puree and powdered sugar. Cool the finished cream.

Spread the cooled cake with cream and add a layer of thinly sliced ​​bananas. Apply a layer of cream to the inside of the second half of the cake and place it on top.

Brush the cake layers and top of the banana cake with the remaining frosting.

Decorate as desired.

Banana cake is ready!

The finished cake should be left to sit for several hours or overnight in the refrigerator, but we always break this rule and immediately eat a piece.

The simplest but most delicious version of banana cake with delicate sponge cakes soaked in condensed milk. Cream with butter. It is important to soften it in advance so that nothing separates. We take bananas that are ripe and aromatic, but not too soft; they should be cut into neat pieces. It is recommended to prepare the egg sponge cake in advance so that it cools completely and rests; it is even better to make the cakes the day before.

Ingredients

  • 5 eggs;
  • 500 g condensed milk;
  • 250 g butter;
  • 5 bananas;
  • 180 g sugar;
  • 150 g flour;
  • 6 g baking powder;
  • 30 g coconut flakes.

Step-by-step recipe for classic banana cake

The whites for the classic cake are whipped separately. Therefore, you need to carefully separate them. Bring until foamy, gradually add about half of the recipe sugar.

After dissolving the sand in the whites, beat the yolks with the remaining sugar. Then we combine the two masses and add flour. To be on the safe side, add baking powder. Stir the dough and transfer it into a 23-24 cm mold. Gently rock it for even distribution.

Place the pan with the dough in the oven and bake a large, fluffy sponge cake. We don’t rush to take it out, let it sit in the oven for a while, cool in the mold, then take it out. After cooling completely, cut into three parts. If it works out, you can make four cakes.

Mix 70 ml of condensed milk and 50 ml of hot water, cool. This will be impregnation. Whip the rest of the milk with butter. Simply cut the bananas into pieces.

We soak the bottom cake with condensed milk, grease it with cream, scatter half the bananas, and don’t skimp on the filling. Place the second cake layer, also soak it in condensed milk, lay out the second part of the bananas.
Step 6:

Soak the last cake layer, coat the cake with condensed milk cream, and sprinkle with coconut flakes. Cool for at least two hours.

It is allowed to use tea or coffee, regular milk with sugar or some kind of syrup for impregnation. The cream for such a cake can also be made from boiled condensed milk.

Option 2: Quick cake recipe with bananas and sour cream

Here is a recipe for a no-bake banana cake based on a fish cracker. We choose unsalted cookies, this is very important. The cake is made in a few minutes and soaked in the refrigerator for 5-6 hours. It can be collected in the form of an anthill (hill), placed in a springform pan, or simply in a bowl covered with cling film.

Ingredients

  • 400 g cracker;
  • 3 bananas;
  • 160 g sugar;
  • 1 packet of vanilla;
  • 600 g sour cream.

How to quickly make a cake with bananas and sour cream

Pour vanilla and sugar into the sour cream, stir and place it all in a bowl with a cracker or pour it into the cream. Stir. While the fish are soaking, prepare the bananas.

An amazing version of the cake with bananas and sour cream. The base is a thin homemade sponge cake. If you don’t have the time or desire to bake it and cool it, then we take a ready-made store-bought cake, everything will work out just fine with it.

Ingredients

  • 3 eggs;
  • 70 g flour;
  • 80 g sugar;
  • 600 g sour cream;
  • 4 bananas;
  • 170 g powdered sugar;
  • 20 g gelatin;
  • 50 ml water.

How to cook

For the sponge cake, beat the eggs and sugar at the mixer's maximum setting and add the flour. Pour the dough into the mold and bake. The crust is thin and cooks quickly. After baking, let it cool, then return it to the pan, wrapping the sides with film.

Pour water into the gelatin and let it swell. Mix sour cream with powder. Melt the gelatin and add to the cream.

Peel the bananas and cut into large pieces. Grease the sponge cake with a thin layer of cream, lay out the bananas, and fill with the remaining sour cream and gelatin. We try to make sure that it fills all the voids. Let the cake harden and remove the pan.

Between the sponge cake and the cream, you can make a layer of marmalade, jam, preserves, pour in any colored jelly or lay out berries.

Option 4: No-bake banana cake recipe

There is one recipe above for a no-bake cake with bananas and crackers, but here is a slightly different option. For dessert you will need square or rectangular cookies. You can take it with vanilla or chocolate flavor. Walnuts and bananas are used for the layer. If the cookies are large, then immediately increase the amount of ingredients for the cream. The cake should be well soaked.

Ingredients

  • 24 cookies;
  • 1 tbsp. walnuts;
  • 800 g sour cream 25%;
  • 1 packet of vanillin;

Step by step recipe

We start with the nuts, as they will need to be cooled. Pour the kernels into a frying pan and fry. Let cool and then chop into small pieces, but not into dust.

Mix powder with vanilla and sour cream. We choose a thick product that will not drip. Peel the bananas and cut them diagonally into small slices. Between themselves, the pieces should have approximately the same thickness, this is important for obtaining an even cake.

You can make three or four layers of cookies, it all depends on their diameter and the size of the dish. Grease a plate with cream and place six or eight cookies on it. Cover the top with cream, scatter some nuts, lay out the bananas and also lightly cover with sour cream.

Place cookies, cream, nuts and bananas again. Then repeat the layer again if it is made from six cookies. If out of eight, then we complete the assembly. Cover the cake with cream. Carefully fill all the voids on the sides.

Grate half the chocolate, combine with the remaining nuts and decorate the banana cake. You can sprinkle the sides with grated cookies, and sprinkle chocolate and nuts only on the top of the cake.

If you use peanuts rather than walnuts, you will need to peel them additionally; this is done after frying. It is enough to mash and blow the nuts, then chop them a little finer.

Option 5: Recipe for a cake with bananas and sour cream “Striped”

To prepare this wonderful cake, two types of cake layers are used: vanilla and cocoa. The cream is made from sour cream, a layer of fresh bananas, and chocolate is needed for decoration. The cakes are baked simultaneously in the oven in two 20-22 cm tins.

Ingredients

  • 6 eggs;
  • 200 g sugar;
  • 1.3 tbsp. flour;
  • 600 g sour cream;
  • 4 bananas;
  • 150 g powder;

  • 100 g butter;
  • 100 g chocolate;
  • 2 spoons of cocoa.

How to cook

Melt half the butter. Separate the whites, sift the flour, add three spoons. Pour 150 grams of sugar into the yolks and set aside. Beat the whites until well foamed, add the remaining sugar. Then beat the whites with the main sand.

Mix flour with baking powder and yolks, add whites, add cocoa to half of the dough. Leave the flour in the second part. Line two identical pans with parchment. Pour out the dough and set the cakes to bake. Cook at 180 degrees for 35 minutes, it is advisable to check at the end.

We cut the cooled cakes lengthwise so that we get four plates. Peel the bananas and cut them into circles. Beat sour cream and powder.

Take one white cake layer, cover it with a layer of sour cream, bananas, and chocolate sponge cake. We also apply a layer of cream on it, then bananas. Cover with white sponge cake and repeat all this. Add chocolate cake. Coat the sides of the cake with the remaining cream, and then proceed to prepare the glaze.

Break the chocolate and add the remaining chopped butter. Place in a water bath and gently melt, do not overheat. Cool the glaze until slightly warm. Cover the top of the banana cake with a thick layer of chocolate. Place in the refrigerator for soaking.

It is not necessary to prepare icing from chocolate, you can cook it from cocoa powder with milk or cream, take ready-made dry icing or simply coat the entire cake with sour cream and decorate to your liking.

  17. After the specified time, remove the cake from the refrigerator and remove it from the mold.



A very delicate sponge cake with sour cream and banana filling. Melts in your mouth. The consistency of the filling resembles cottage cheese. Banana cake will be the highlight of your table, pleasantly surprising your guests with its taste and appearance.

Separate the whites from the yolks.

Beat the whites with a mixer until they form a strong foam. Beat for a few minutes at low speed, then add a pinch of salt and a little sugar and beat at high speed until stiff peaks form.

Grind the yolks with the remaining sugar.

Add some of the whites to the yolks, carefully mix with a spatula from bottom to top, without disturbing the splendor of the protein mass. Add flour to the dough and stir. Next, add the remaining whites and mix gently again.

To bake the sponge cake, use a silicone sponge pan with high sides or a pan with removable sides. The main condition is that the sides must be high, since the biscuit will rise well. Grease the silicone with oil, and you can put parchment in a metal mold.

Bake the biscuit at 180 degrees for about 30 minutes - test with a toothpick for doneness.

Cut off the top of the cooled sponge cake, about 0.5 cm thick. This will be the lid of the cake.

Using a knife, carefully cut out the inside of the sponge cake, leaving the bottom and sides about 1 cm thick.

Beat sour cream with 3/4 cup sugar and vanilla sugar.

Peel the bananas and cut into thin slices.

Leave a little sour cream to coat the bottom and top of the bananas. Mix the rest of the cream with the removed insides of the biscuit, crumbling them.

Grease the bottom of the biscuit and the sides with sour cream.

Place a layer of bananas on the bottom.

Next, fill the sponge cake with cream and pulp and smooth out the layer.

Place another layer of bananas.

Brush the bananas with the remaining sour cream.

Before making the dough, turn on the oven - let it warm up to 180 degrees. Now about the tricks of a quick biscuit. I will not separate the yolks from the whites and beat them separately, as is customary, and I will also not melt the butter, but first things first.

Let's start preparing the base of the banana cake by beating four eggs and 70 g of sugar in a deep bowl with a mixer. You need to beat until the sugar is completely dissolved, you can try with your finger to see if there are any grains. Then add flour sifted with a teaspoon of baking powder into the egg mixture a little at a time.

Initially, in the list of products I indicated 200 g of flour, there is a caveat here: the dough for homemade banana cake should be the consistency of thick sour cream, so Add flour in small portions. It is possible that the entire amount will not be needed. I repeat once again: The dough should spread, but with difficulty.

Next, set the dough aside, take a springform pan and crumble 100 g of butter into small pieces onto the bottom of the pan, trying to distribute it evenly over the bottom. Sprinkle bread crumbs generously over the top of the butter. In my opinion, a very tasty banana cake is obtained when there are a lot of bananas in it.

Before pouring the dough into the mold, finely (1 cm x 1 cm) chop a couple of bananas and add them to the dough, and then pour it evenly into the mold with a spoon. Place the mold in an oven preheated to 180 degrees for 20-25 minutes.

While the base of the banana cake is languishing in the oven, let's make the cream. Beat 500 ml sour cream with the remaining 70 g sugar.

It is better to beat the cream from homemade sour cream with a whisk, otherwise you can overdo it and beat the butter with a mixer.

Next, I want to offer you two options to choose from on how to make cream for a banana cake: I tried it this way and that way. You can add mashed bananas to the cream, you can cut them into pieces and place them on the crust, and then grease them with cream. Both options are delicious.



Take the finished biscuit out of the oven and let it cool. Then cut it in half and start assembling the cake.

Bananas are a unique product in their own way; they can be combined with any fruit and berries that can be used for decoration, and the combination of chocolate and banana has long been used by confectioners of all countries and peoples.
