The fish is cleaned, gutted and washed and left to dry on a towel. Then rub with pepper, mayonnaise and salt. Place in the middle of a baking sheet, greased with oil and slightly salted.

Cut the onion into half rings and lay it out in a layer around the fish carcass. The same is done with carrots, which are first cut into slices. Place layers of potato slices on top, not forgetting to salt each of them. The top layer is greased with vegetable oil using a brush.

Place the ide fish in the oven, where it is kept for 15 minutes. at +220°C. Then move it to the upper zone and cook for another 20...25 minutes. The finished dish will have a golden brown crust on the fish.

Stuffed ide in the oven

To make cooking ide easier, you should start by freezing it. Then they take it out, defrost it a little, peel the scales and wash it. Make an incision in the skin around the head and, using the blunt end of a fork, remove the skin from the carcass, pulling it with a stocking towards the tail. When removing the skin, the fins and tail are trimmed, leaving them in place.

The head is separated and the insides are cleaned. Remove the meat from the bones and grind in a meat grinder, adding onions and carrots. Salt, raw egg, pepper, previously cooked and cooled millet porridge are added to the resulting mass. Mix everything, stuff the fish skin, place it on a sheet (pre-lubricate it with vegetable oil), and put the head on it.

Cook the ide in the oven for about an hour, temperature +200°C.

To prepare ide, it is first cleaned, gutted, washed, and the fins are trimmed. The inside of the resulting carcass is filled with finely chopped onions, salted and peppered beforehand.

Deep transverse cuts are made on top of the carcass, rubbed with pepper and salt, and half rings of lemon are inserted into the cuts. Leave the ide to marinate in the refrigerator for 30 minutes.

1. We clean the ide from scales, remove the entrails and gills, cut off the fins, and wash them. This specimen of ide, about half a meter long, was caught in a pond, and therefore it is possible that the meat may smell like mud. Therefore, it is advisable to keep the carcass in brine for a couple of hours before cooking to eliminate the smell.

There were no dishes suitable for this monster, so I had to thoroughly wash the kitchen sink, plug it, fill it with cold water, salt it thoroughly and put the ide in there.

2. Finely chop a couple of onions, add red and black pepper, salt, squeeze out half a lemon, mix and stuff our ide with it.

3. On both sides of the ide carcass, make cuts down to the bones, rub the carcass with a mixture of red and black pepper and salt, and insert and press halves of thin lemon slices into the cuts.

During the cooking process, lemon juice will successfully dissolve the smallest seeds, and the lemon slices themselves, after baking, will become a good addition to the fish: quite edible and quite tasty.

4. Pour a little vegetable oil onto a baking sheet and place the onion cut into thin rings. We place the ide on an onion “bed” - this way it is guaranteed not to burn on the baking sheet when baking.

5. Cover the baking sheet tightly with food foil: this will prevent the fish from drying out, and place the baking sheet with the ide in the oven.
