Pancakes appear on our table not only on Maslenitsa, so we’ve tried all sorts of them. I really liked the version of pancake dough with sour cream and milk. It turned out to fry very thin pancakes, and they were not rubbery. I don’t know if it’s the sour cream or not, but I personally liked this method. Moreover, if you plan to fry pancakes, then there is always sour cream in the refrigerator.

To make pancakes made with sour cream and milk more flavorful, you can add a little ground cinnamon or vanilla sugar to the dough.

Prepare all the necessary ingredients.

Take a deep bowl or saucepan, add a couple of fresh chicken eggs and pour in milk at any temperature. Slowly start mixing everything with a whisk.

Now add sugar and a couple of pinches of salt. At the same stage, you can add cinnamon and vanilla sugar. The main thing with cinnamon is not to overdo it, as with vanilla (if you use it). Excess spices can add bitterness to pancakes.

Add vegetable oil without a strong smell or taste and low-fat sour cream. Fatty ones will most likely be thick and will make it harder to bring the dough together until smooth.

Now begin to gradually add wheat flour, without stopping stirring with a whisk. You can use an immersion blender for literally 5-10 seconds.

Stir the dough vigorously until the last lump of flour is mixed in. After this, let it stand for 15 minutes.

To fry the first pancake, it is advisable to grease the pan with vegetable oil. After that, heat it up and pour a small portion of the dough, distribute it throughout the pan. Fry the pancake over low heat for a minute and a half.

Using a spatula, flip the pancake over to the other side and cook for another 30 seconds. Since the pancake is almost ready, you just need to wait for the other side to brown.

Place the finished pancakes on a plate in a pile or roll them into tubes. Serve pancakes with sour cream and milk immediately while they are still warm.

You can sprinkle the pancakes before serving powdered sugar or top with sweet sauce or sour cream.
