Before sending to the oven, pickle the capelin with lemon juice and seasonings: salt, pepper, favorite spices.

Capelin is a rather oily fish and to reduce the calories in the finished dish, you can cook it without oil. And so that during baking in the oven it does not burn and stick, we cover the baking sheet with paper or cook in foil.

By itself, baked capelin turns out to be delicious, and in addition, you can make a side dish of potatoes or vegetables.

In time, capelin is cooked quickly, but if there is a side dish, it may take more time - in this case, we cook as many minutes as indicated in the recipe.

Breading will help to bake fish with a fried crust. We make it from flour or breadcrumbs and bake at a temperature of 220 degrees.

Capelin has a specific smell, lemon juice will help to overcome it. Spray them before marinating. Not all recipes contain lemon juice, but it’s more correct to do this, it will not affect the taste of the dish, but it will get rid of the smell.

There are many recipes for baking capelin in the oven for every taste. From simple ones, which use only fish and spices, to complex ones, with various side dishes, breadings, batters and marinades.

Recipes

Capelin baked without oil

Even without complex marinades and additional products, baked capelin itself is very tasty. The absence of oil in the recipe makes it dietary and harmless to the figure. And the fats present in the fish will not cause harm and are even beneficial to the human body.

To get a golden and crispy crust, first roll in flour.

Would need:

  • capelin in the amount of 1 kg;
  • salt, black pepper to taste;
  • lemon, 1-2 slices are enough;
  • flour - 150 gr.

Step by step cooking process.

  • We prepare the fish: wash and dry it, putting it on napkins. Further, to taste: we will either bake the whole thing, or remove the head and gut the carcasses.
  • So that the strong smell of fish does not spoil the impression of the dish, sprinkle it with a little lemon juice, squeezing it out of the slices.
  • To form a beautiful crust, prepare the breading: mix the seasonings with flour.
  • In order not to roll each fish separately, as this is a time-consuming process, let's take a bag. Pour the breading into it and lay out the capelin. We tie the bag and begin to shake it so that each fish is covered with flour. This method of breading is very simple and convenient. In addition, you do not have to wash additional dishes, which will save time.
  • We spread the capelin on a sheet covered with baking paper or foil, close to each other.
  • Cooking in a preheated oven at 180 degrees.
  • We follow the process: when a golden crust has formed, the dish is ready.
  • Do not leave unattended for a long time, otherwise there is a risk of overdrying.
  • Fried fish can be served with a side dish of potatoes.

You can also bake without flour.

Capelin baked without flour

For this recipe you will need:

  • capelin in the amount of 1.5 kg;
  • salt and a mixture of peppers, 1 tsp each;
  • red pepper - 0.5 tsp;
  • half a lemon.

Step by step cooking.

  • We wash the fish and put it on a paper towel to dry.
  • We cover the sheet on which we will bake with baking paper.
  • Sprinkle the mixture of peppers and half of the salt directly onto the paper.
  • Lay the fish close together and sprinkle with the remaining salt and red pepper.
  • We send to bake at a temperature of 250 degrees for 10 minutes. If the oven is electric, set the top-bottom mode.
  • Pour the finished dish with lemon juice.
  • When serving, you can decorate with thin lemon slices.

A tasty and healthy dish will be fresh fish, supplemented with vegetables: onions, potatoes or tomatoes.

With onion

Would need:

  • capelin in the amount of 1 kg;
  • onions will need 3 heads;
  • sour cream - 150 ml;
  • salt, black pepper to taste;
  • frying oil.

Process.

  • Wash and dry the fish. Then we either cut it or leave it whole, as you like.
  • Cut the onion into half rings and lightly fry in a pan.
  • Mix sour cream with spices and water (50 ml). You can add chopped herbs to taste.
  • Line a baking dish with parchment paper and grease with a little oil.
  • We spread capelin on paper, fried onions on top and pour everything with sour cream with spices.
  • Cook in the oven for 30 minutes at 160 degrees.
  • When the fish is baked, to form a crust, raise the temperature to 200–220 degrees and wait another 10 minutes.

When serving, you can decorate with herbs.

With potato

Would need:

  • capelin in the amount of 800 gr.;
  • medium-sized potatoes - 5 pcs.;
  • garlic cloves - 3 pcs.;
  • half a lemon;
  • salt, pepper and other spices to taste;
  • dill - 1 bunch;
  • sunflower oil - 2 tbsp. l.

Cooking process.

  • We prepare the fish: remove the head, gut and rinse under running water. Lay out on a paper towel to dry.
  • Peel potatoes for a side dish. It can be cut into circles or slices, most importantly, not very large, so that the potatoes cook faster.
  • We squeeze the garlic through a press and gently mix with capelin, you can coat each separately. Drizzle with lemon and sprinkle with any spices you like. You can take a ready-made mixture of seasonings for fish.
  • Finely chop the dill and send to the potatoes. Add salt, pepper and mix.
  • We grease the form in which we will bake with oil and put the potatoes on it, cover with foil and bake without fish for 25 minutes at a temperature of 200 degrees. We bake potatoes separately, as they cook longer than fish.
  • When the potatoes are baked, open the foil and lay out the capelin.
  • Bake another 20-30 minutes already without foil.
  • Sprinkle the finished dish with herbs and enjoy.

With tomatoes

Tomatoes will add color and juiciness to the finished dish. And the spices used will give a special taste.

Would need:

  • capelin in the amount of 0.5 kg;
  • black pepper - 0.5 tsp;
  • dried oregano and thyme, 1.5 tsp each;
  • salt - 0.5 tsp;
  • tomatoes - 3 pcs.

Cooking.

  • You need a fish fillet. To do this, we wash it and cut it, removing everything superfluous: we cut off the head, gut and remove the backbone.
  • We cut the tomatoes into slices. You can use multi-colored tomatoes (red and yellow), then the dish will look more interesting.
  • Grease a baking sheet with oil and lay half of the prepared capelin fillet.
  • Place half of the chopped tomatoes on top.
  • Sprinkle with salt, pepper and dried herbs. You can take any you like. Rosemary also pairs well with fish.
  • Again lay out the remaining capelin and the last layer of the second part of the tomatoes.
  • Sprinkle with spices and bake at a temperature of 200 degrees for 30 minutes.

With vegetables

Would need:

  • capelin in the amount of 0.5 kg;
  • large carrots - 1 pc.;
  • onion - 1 large head;
  • tomato paste - 1 tbsp. l.;
  • sour cream - 2 tbsp. l.;
  • salt, pepper to taste;
  • sunflower oil for frying.

Cooking.

  • We remove the head and offal. Rinse and dry on paper towels or paper towels.
  • Cut the onion into half rings, chop the carrots or rub on a coarse grater.
  • Fry vegetables in a pan until tender.
  • We add to them tomato paste and simmer for 2 minutes. If desired, you can add fresh tomatoes instead of pasta. Vegetables add flavor and health to the dish.
  • Put the fried vegetables on a baking sheet with the first layer, and lay the capelin on them.
  • Salt the fish, pepper and grease with sour cream.
  • Bake at 180 degrees for 30 minutes.
  • While the fish is cooking, you can make a side dish: boil the potatoes and mash them.
  • Garnish with chopped herbs when serving.

At first glance, an unusual, but tasty and interesting combination is capelin with an egg. Can be baked in egg batter, or you can make an omelette with fish in the oven.

In egg batter

Would need:

  • capelin in the amount of 800 g;
  • eggs - 2 pcs.;
  • flour - 60 g;
  • cheese - 50 g;
  • salt and spices to taste.

Cooking process.

  • The finished fish will be in batter and choosing the bones is not very convenient, so you need to remove the head, offal and backbone in advance.
  • We wash the fillet and dry it on napkins.
  • Cheese for batter rub on a fine grater.
  • Mix flour, salt and spices, cheese and eggs. You can knead the batter with a mixer, blender or a regular fork, whichever is more convenient for you.
  • Lubricate the baking dish with oil or cover with oiled paper.
  • Turn on the oven to heat up to 200 degrees.
  • Gently dip each fish in batter and send to the prepared sheet.
  • Bake for 30 minutes.
  • You should not disturb the fish during baking (turn it over or open the oven).

Another option with an egg is to make not a batter, but an omelette.

Omelet with fish

Would need:

  • capelin in the amount of 0.5 kg;
  • onions - 3 heads;
  • milk - 150 ml;
  • eggs - 2 pcs.;
  • flour - 2 tsp;
  • salt, spices to taste;
  • frying oil.

Cooking.

  • We prepare the carcasses: remove the head, gut and remove the bones. We wash and dry.
  • First, the fish must be fried in a pan. To do this, salt it, pepper it and roll it in flour or breadcrumbs. Fry on both sides.
  • Onion cut into small cubes and fry. You can use green onions, it does not need to be fried.
  • Whisk the eggs lightly with salt and milk.
  • Put the fish in a baking dish, sprinkle with onions and pour over the egg mixture. Preheat the oven to 170 degrees and send the fish and eggs there for 30 minutes.
  • Decorate the finished omelette with herbs and grated cheese. You can sprinkle the cheese a few minutes before the end of cooking to melt it. You can also add cheese in chunks directly to the omelette while cooking.

Capelin is a marine fish and, like any inhabitant of the seas, is rich in vitamins and microelements. And the proteins of chicken eggs contain the amino acids necessary for the body. It turns out that an omelette with capelin is a healthy dish.

Capelin in the sleeve

Capelin contains B vitamins, including nicotinic acid (vitamin PP). It is contained in fish up to 15% of the daily requirement needed by a person. Nicotinic acid helps lower cholesterol, improve blood circulation and memory.

Would need:

  • capelin in the amount of 0.5 kg;
  • onion - 1 head;
  • lemon - 3 slices;
  • salt, spices to taste.

Cooking process.

  • Capelin is used whole, washed and dried.
  • Salt the fish, season with spices and pour over lemon juice, squeezing the slices. You can use ready-made seasoning mix for fish or your favorite spices.
  • We leave the fish to marinate a little and soak in the aromas.
  • We cut the onion into half rings, salt it and knead it a little to highlight the juice.
  • Put the fish and onion in layers in a baking bag, tie it up and send it to cook for 30 minutes at a temperature of 200 degrees.
  • As a side dish, you can offer boiled potatoes or fig.

in foil

Would need:

  • capelin in the amount of 700 g;
  • soy sauce - 2 tbsp. l.;
  • curry - 0.5 tsp;
  • pepper to taste;
  • bay leaf - 2 pcs.;
  • sunflower oil - 1 tbsp. l.

Cooking process.

  • We wash the carcasses and dry them. Can be cooked whole or gutted with the head and entrails removed.
  • For marinade, mix soy sauce with spices (pepper and curry), pour fish over it. Let it soak for 30 minutes.
  • After half an hour, we cover the baking sheet with foil, grease it with oil and lay out the carcasses, pouring the marinade.
  • Put a bay leaf on top and cover with foil.
  • Bake for 30 minutes at 200 degrees.
  • The finished dish will turn out tasty and fragrant, soaked in the spices used.

This little fish is rich in minerals such as iodine and chromium. Chromium and iodine protect the body from the development of diabetes, and iodine is also necessary for the functioning of the thyroid gland. It is responsible for the functioning of the nervous system and for the condition of the skin and hair.

in sour cream

Would need:

  • capelin in the amount of 1 kg;
  • garlic cloves - 5 pcs.;
  • sour cream 20% - 150 ml;
  • spices to taste.

Process.

  • The fish is washed, cleaned and dried.
  • Squeeze the garlic through a press.
  • Mix capelin with garlic and any spices you like and leave to soak for 15 minutes.
  • On a greased baking sheet, lay out the fish, which has absorbed the aromas of garlic and spices, and pour sour cream. Seasonings can also be added to sour cream: paprika or herbs.
  • capelin in sour cream sauce cook for 40 minutes at a temperature of 200 degrees.

Ready-made fish in sour cream sauce goes equally well with potatoes and cereals.

with mayonnaise

If calories are not important, you can cook delicious fish in mayonnaise.

Would need:

  • capelin in the amount of 1 kg;
  • mayonnaise - 200 ml;
  • onions - 3 heads;
  • tomato - 2 pcs.;
  • potatoes - 4 pcs.;
  • sunflower oil for frying;
  • salt - 0.5 tsp;
  • black and red pepper, 0.5 tsp each.

Process.

  • We use whole fish. We wash it, season with salt and pepper, add a little mayonnaise and leave to marinate for half an hour.
  • While the fish is cooking, peel the potatoes. Cut it into circles, salt and mix with one tablespoon of mayonnaise. The thickness of the circles is about 0.5 cm.
  • Tomatoes are also mode in circles.
  • Onion cut into small cubes. Fry it until transparent.
  • We lay half of all products in layers on a sheet: potatoes, tomatoes, fish and onions. Next, lay the remaining ingredients in layers in a different sequence: potatoes, capelin, onions and tomatoes.
  • Top with the remaining mayonnaise.
  • We heat the oven to 200 degrees and send the fish and vegetables to bake. We look at the readiness of the potatoes.

Feed options

You can serve baked capelin on the table directly in the form in which it was prepared, or put it on a large beautiful dish or serve in portions.

If you plan to serve in a baking dish, it should look aesthetically pleasing. If there is no such form, then it is better to serve on a plate.

You can decorate the finished dish with herbs, lemon slices, onion rings or olives.
